Composition:
- crème fraîche (or cream) – 100 g;
- blue cheese – 150 g;
- lime juice – 10 ml;
- salt and white pepper – to taste.
Recipe:
- Season the sour cream with salt and pepper (white only). Many manufacturers make the cheese itself salty, so you should handle salt carefully. Mix.
- Finely (literally into dust) chop the cheese. Mix with lime juice. Lemon will also work, but then you need to take twice as much juice.
- Combine sour cream with cheese and mix well again.
Crème fraiche is a classic sauce base used in France. To follow a completely original recipe, you will have to search for such a product in Russian stores for a long time.
But it is successfully replaced by sour cream – the taste is almost identical.
Hot recipe
Blue cheese sauce originally appeared in the form of this simple recipe, and many Americans still prepare it this way at home.
Composition:
- cream – 200 ml;
- blue cheese – 70 g.
Recipe:
- Heat the cream in a saucepan.
- Cut or crumble a piece of cheese with your hands. Add to cream.
- Reduce heat to low. Stir continuously until the mixture becomes homogeneous.
- When the cheese has melted, turn off the gas. The heavy cream will be quite thick by then.

Fans of garlic sauce will appreciate this sauce recipe. You don’t have to add much – delicate ingredients such as cheese and sour cream will be saturated with garlic aroma even from a small clove.
Composition:
- sour cream – 100 g;
- blue cheese – 80 g;
- garlic – 1 clove;
- dill – 2 sprigs;
- salt and pepper.
How to do:
- Grind the garlic in any way.
- Finely chop the dill. Combine with garlic, salt and pepper in a mortar and crush to a paste.
- Mix the resulting mixture with sour cream in a bowl with a lid.
- Grate the cheese on a fine grater. Add to remaining ingredients and stir.

It can also be used as fondue sauce. This is not the easiest way to make blue cheese sauce at home, but it is one of the most delicious.
Composition:
- cream (preferably 33% fat) – 150 ml;
- blue cheese – 80 g;
- dill – 2 sprigs;
- lemon juice – 10 ml;
- Worcestershire sauce – 1 tsp;
- salt, dried garlic, pepper.
Recipe:
- Beat the cooled (this is important) cream with a mixer until foamy. Add lemon juice and beat for another 20 seconds.
- In a separate container, mix Worcestershire sauce with salt and pepper.
- Slowly pour the sauce into the cream, stirring constantly.
- Grind the cheese and add to the rest of the ingredients. Stir carefully so that the creamy foam does not settle.
- Add dill, season with dried garlic to taste. Stir and serve immediately.
With two types of cheese
This recipe will appeal to those who are not crazy about the pure taste of blue cheese. The cream cheese in the composition is intended to balance the sauce and make it less savory.
Composition:
- blue cheese – 100 g;
- cream cheese (any soft variety) – 120 g;
- milk – 90 ml;
- dill – 3 sprigs;
- lemon – 0.5 pcs.;
- salt and pepper.
Recipe:
- Pour milk over cream cheese and puree until smooth. Sometimes you may need a blender, but more often soft cheese can be easily mashed with a spoon.
- Squeeze half a lemon into the mixture. The juice can be replaced with apple or grape cider vinegar.
- Add salt and pepper and stir.
- Grate the blue cheese finely and add to the rest of the ingredients.
- Add chopped dill as a garnish. To stir thoroughly.
With milk and onions
Onion bleu cheese is a great fire-grilled sauce recipe. The oil in the recipe can be anything from butter to olive.
Composition:
- blue cheese – 100 g;
- onions – 100 g;
- butter – 30 g;
- milk – 250 ml;
- flour – 1 tbsp. l. (with a small slide);
- garlic – 2 cloves;
- dill – 3 sprigs.
How to cook:
- Chop the onion as finely as possible.
- Heat oil in a frying pan. Add the onion and fry over low heat until softened (no need to be completely done).
- Increase heat to medium. Add flour and mix well. Fry until golden.
- While stirring, pour in the milk. Bring the future sauce to a boil.
- Add salt and pepper. Stir and immediately remove from heat.
- Finely chop the cheese while the sauce cools (to about 60°C). Also chop the garlic and dill.
- Mix all ingredients and leave the sauce to cool completely.
Try it as a sauce for potatoes fries and you won’t regret it!
Blue cheese with mint
To make mint blue cheese at home, you will need a stove. It is useless to prepare this sauce cold – then the aroma of mint will not be revealed, and the sauce will taste ordinary.
Ingredients:
- blue cheese – 100 g;
- cream – 250 ml;
- flour – 5 g;
- mint – from 5 to 7 leaves;
- salt, pepper, sugar.
Recipe:
- Fry the flour until golden brown in a small amount of oil.
- Pour the cream into the flour, stir and cook over medium heat until the mixture comes to a boil. There is no need to boil – as soon as the first bubbles appear, you should remove the pan from the stove.
- Grind the cheese and pour into the cream. Stir until the mixture becomes homogeneous.
- Add a pinch of sugar, salt and spices to taste.
- Chop the mint leaves and add to the sauce while it is still hot. Stir and let sit for about 20 minutes.
Sugar in this recipe can be replaced with honey. In general, it is not necessary – it goes well with mint, but this is a matter of taste.
With Worcestershire
Worcestershire sauce is not sold in every store. But if you manage to find it, this is a great reason to prepare blue cheese according to a non-standard recipe.
Composition:
- blue cheese – 150 g;
- cream – 200 ml;
- Worcestershire sauce – 1 tbsp. L.;
- mayonnaise – 100 ml;
- wine vinegar (preferably white) – 0.5 tsp;
- mustard powder – 0.5 tsp;
- salt, pepper, dried garlic.
Recipe:
- Mix sour cream and mayonnaise in a deep container.
- Add mustard, garlic, salt and pepper and stir again.
- Pour in vinegar and Worcestershire.
- Mash the blue cheese and add to the future sauce.
- Beat with a blender (or just mix well). Place in the refrigerator for 15 minutes.
Mayonnaise in this recipe can be replaced with kefir or not used at all. Even better make homemade mayonnaise. And if you like the taste of Worcestershire, you can add more of it, up to 3 tbsp. l.
With avocado
To make a thick blue cheese dip, you can use avocado. This fruit allows you to thicken the sauce without heating it on the stove, and the piquant taste of the cheese does not go away.
We will need:
- blue cheese – 50 g;
- avocado – 1 piece;
- onions – 1 pc.;
- sour cream – 3 tbsp. L.;
- lemon juice – 1 tsp;
- salt and pepper.
Recipe:
- Peel the avocado. Cut into small cubes.
- Chop the onion.
- Mash the cheese with your hands or press it with a fork.
- Place all ingredients in a blender. Add lemon juice and spices.
- Blend until smooth.

- Chop the basil and place in the bottom of a deep container.

Composition:
- blue cheese – 50 g;
- mayonnaise – 100 ml;
- milk – 300 ml;
- onions – 1 pc.;
- sour cream – 4 tbsp. L.;
- cream (low fat) – 3 tbsp. l.;
- garlic – 1 head;
- Worcestershire sauce – 1 tsp;
- lemon juice – 1 tbsp. l.;
- salt and pepper.
Recipe:
- Chop the onion finer. Grind the garlic in a crusher.
- Press the cheese with a fork. Add sour cream and mayonnaise to it, beat in a blender (or whisk).
- Stirring continuously, pour in the cream first, followed by the milk.
- Add onion and garlic to the future sauce. You can use fresh or fry it to your liking.
- Add Worcestershire sauce, lemon juice and spices. Mix everything.
Unlike other recipes, this one uses low-fat cream. This is necessary to balance the fat content of the mayonnaise. But you can make healthy mayonnaise yourself.
With added wine
White wine complements the taste of blue cheese. Therefore, it is traditionally used as an appetizer for wine, and also added to cheese sauces. This recipe is especially popular in France.
Composition:
- white wine (dry or semi-dry) – 120 ml;
- blue cheese – 170 g;
- butter – 50 g;
- garlic – 4 cloves;
- green onions – 30 g;
- lemon – 0.5 pcs.;
- thyme (or dill) – 2 sprigs;
- salt and pepper.
Recipe:
- Melt butter in a saucepan. Add finely chopped garlic and cook for about 2 minutes.
- Finely chop the onion. Add to the butter with garlic, sprinkle with salt and pepper. Stir well.
- Pour in the wine. Squeeze the juice from half a lemon. Mix again.
- Boil for 10 minutes. Then remove from the stove and cool.
- Pass the cooled mixture through a blender (or beat a little with a whisk).
- Add chopped cheese and herbs. Whisk again until lumps dissolve.
Blue cheese a la béchamel
An original way to make bleu cheese sauce with your own hands is to include blue cheese in the traditional bechamel sauce. The combination is simply incredibly delicious!
Composition:
- blue cheese – 100 g;
- milk – 200 ml;
- butter – 40 g;
- flour – 2 tbsp. L.;
- dill – 1 bunch;
- salt and pepper.
Recipe:
- Grind cheese and dill.
- Melt butter in a saucepan over low heat.
- Add flour and stir a little. Immediately pour in the milk in a thin stream, stirring constantly with a whisk.
- Add shredded blue cheese. Continue stirring so that the milk and flour do not burn.
- Add dill and salt and pepper to the sauce. Stir again with a spoon and immediately remove from the stove.
It is better to cool this sauce to room temperature before serving. Although many people like it hot.
By the way, you can use rice, corn or any other healthier flour. But it is needed here the sauce with flour will be thicker.
What to serve with
Ready-made bleu cheese sauce goes well with many dishes. You can use it without restrictions, experimenting with different products. But traditionally the sauce is served with:
- any meat dishes (it is especially good with poultry, including breaded wings);
- fish cutlets, fried and baked fish, salmon is especially good;
- seafood – mussels, shrimp and sea cocktail;
- meat by-products (liver, heart, etc.);
- vegetables cooked in a frying pan or open fire;
- an ordinary boiled chicken breast combined with this sauce turns into a restaurant dish;
- spaghetti and all types of pasta;
- snacks (toast, chips, breaded onion or squid rings, crackers, croutons).
In the USA, especially in the southern states, Dor Blue sauce is widely used for nachos and as burger sauce.
One clarification – for the sauce to become like deep sauce and suitable for snacks or vegetable crudit, it must be thickened a little more than for meat or fish. To do this, you will have to use sour cream or thicker cream.
Also, blue cheese can be spread on sandwiches instead of butter. If you add more cheese and less sour cream, you get a paste-like mixture that is easy to spread with a knife. These sandwiches are very good with tomatoes and herbs.
Helpful Tips and Tricks
A few tips regarding blue cheese sauce:
- Although the sauce requires fairly heavy cream and sour cream (at least 10%), you can’t overdo it either. If the fat content of the dairy product is more than 30%, then in combination with the high fat content of the cheese, the sauce will turn out tasteless.
- If the bleu cheese sauce ends up being too fatty, you can beat it in a blender until foamy. This will greatly improve the taste.
- You can save money when cooking if you add any other cheese with a neutral taste (creamy or brine) to the blue cheese. The main thing is that moldy varieties should be at least 50% of the total volume. Then the taste of the sauce will not change.
- To reduce the calorie content of blue cheese sauce, sour cream or cream in any recipe can be replaced with milk. You will have to simmer the sauce with a little flour to thicken the milk, but this will not affect the taste.
