You often have to think about how you can replace rice vinegar for rolls at home, because finding it in stores is not so easy. So let’s look at recipes for various dressings – both with and without rice vinegar.

Classic dressing – sushizu
This is a traditional sushi dressing recipe used both in Japan and in restaurants in other countries. It cooks quickly and gives the rolls exactly the taste that we are all accustomed to. Sushizu dressing is made with rice vinegar, and in this recipe it cannot be replaced with anything.
Composition:
- rice vinegar – 3 tbsp. l.;
- sugar – 2 tbsp. L.;
- sol – 0.5 h. l.
Recipe:
- Pour vinegar into a saucepan and place on low heat. The flame should be very small so that the dressing does not boil.
- While stirring, add sugar first, followed immediately by table salt.
- Cook, continuing to stir, until slightly thickened. Sugar and salt should dissolve completely.
- When the mixture thickens, turn off the heat. Leave in the preheated saucepan for another 5 minutes to allow the dressing to cook through.
When making rice vinegar dressing, you don’t need to add any additional ingredients. This liquid itself gives a good aroma. But there is a variant of sushizu, in which a sheet of kombu seaweed is placed in a container, and after turning off the fire, it is removed.
The proportions are given for approximately 100 grams of dry, unboiled rice, since rice is always different and is cooked differently.
Walnut
An unusual dressing for boiled sushi rice – with the addition of nuts. More precisely, you need to use nut butter in which the fruits are already crushed.
Composition:
- nut butter (from peanuts or from cashews) – 3 tbsp. l.;
- water – 100 ml;
- apple cider vinegar – 3 tbsp. l.;
- sesame oil – 1 tbsp. l.;
- sol – 0.5 h. l.
How to make a dressing:
- Put water on low heat. Add the paste and stir until completely dissolved.
- Add vinegar and sesame oil alternately. Add salt and stir thoroughly.
- Reduce heat to low. Boil the dressing for 4-5 minutes (until it thickens). If it turns out to be too thick, you can add a little more water.
- Remove from heat and stir.

With apple cider vinegar
Vinegar dressing for sushi rice is prepared from different types of vinegar. There are also recipes using apple cider vinegar (3%). Here’s one of them.
Composition:
- apple cider vinegar – 4 tbsp. l.;
- sugar – 3 tbsp. L.;
- salt (to taste).
How to prepare the dressing:
- Combine all 3 ingredients in a small container. It must be metal.
- Place on low heat. Stirring continuously, cook until the grains of salt and sugar dissolve.
- Boil a little more until the dressing has a sticky consistency.
Apple cider vinegar dressing, like others, should be used chilled. First, cool to at least room temperature, and only then mix with rice. This results in the most intense taste.
With regular 9% vinegar
A dressing made from regular 9% vinegar is also tasty and goes well with rolls. A sushi dressing is prepared from ordinary vinegar according to the recipe given below.
Composition:
- nine percent vinegar – 30 ml;
- soy sauce – 40 ml;
- sugar – 15 g.
Step by step recipe:
- Mix all 3 ingredients in a metal container.
- Place on low heat. Stirring frequently, bring to a boil.
- The sugar should have time to dissolve during boiling. If not, then the dressing should be boiled for another 1-2 minutes.
- Remove from heat and cool.
Vinegar dressing should be used cool. Even if the rice itself is hot, the sauce must have time to cool before adding. You can make this dressing with table vinegar and without soy sauce, but then you will have to dilute 9% vinegar with water and add a little salt.
From wine vinegar
You can also prepare a dressing using wine vinegar. It turns out to be different from previous recipes and has its own flavor.
Composition:
- wine vinegar – 2 tbsp. l.;
- water – 100 ml;
- sugar – 1 tbsp. L.;
- change – 1 h. l.
Recipe:
- Mix all 4 ingredients in a convenient container.
- Place on low heat. The important point is that you need to mix first and then heat.
- Stirring continuously, wait until the sugar is completely dissolved. Ideally, the sugar will dissolve before the water has time to boil.
- Immediately after dissolving, remove the container from the heat.
With lemon
Lemon rice dressing is an unconventional but very popular recipe. Preparing a rice dressing for rolls with citrus juice is no more difficult than the classic one.
Composition:
- rice vinegar – 1 tsp;
- lemon juice – 1 tbsp. l.;
- water – 120 ml;
- sugar – 1 tsp. l.;
- change – 1 h. l.
How to do:
- Combine vinegar, water and sugar in a non-enamelled metal bowl. Mix.
- Place on very low heat. Stirring until smooth (the sugar should dissolve and the overall consistency should become viscous and sticky).
- Add salt and lemon juice. Stir again until the salt dissolves.
- Remove from heat. Pour into another container and cool.
Dressing with seaweed
An unusual dressing for rice at home – using Japanese seaweed. It gives the rolls a special flavor that is not present when prepared according to other recipes.
It is advisable to use kombu seaweed, but if you cannot find such seaweed, you can replace it with a regular sheet of nori.
Composition:
- dried kombu seaweed (or nori) – 1 sheet;
- apple cider vinegar – 3 tbsp. l.;
- water – 3 tbsp. L.;
- sugar – 2 tbsp. L.;
- sol – 0.5 h. l.
How to cook:
- Place a sheet of seaweed at the bottom of a metal container.
- Pour in vinegar and water. Also add salt and sugar.
- Turn on low heat. Boil until salt and sugar are completely dissolved. No stirring required.
- Turn off the fire. Leave the dressing (preferably covered) for 30 minutes to infuse.
- Remove the seaweed. Strain if necessary.
If nori is used, most likely the dried leaf of this seaweed will spread, and the dressing will have to be strained. But with kombu seaweed, this is usually not required.
With soy sauce
The dressing for homemade rolls will be more piquant than usual if you add soy sauce to the list of ingredients. In Japan, they also like to make rice dressing with soy sauce, so it can be considered traditional.
Composition:
- rice vinegar (can be replaced with apple cider vinegar) – 4 tbsp. l.;
- soy sauce – 2 tbsp. l.;
- sugar – 2 tbsp. L.;
- salt – 1 tbsp. l.
Recipe:
- Place vinegar on low heat.
- Add soy sauce and bulk ingredients one by one, remembering to stir.
- Boil, stirring constantly, until the sugar and salt melt.
The sauce must be used only classic, without flavorings, spices and other additives. Any additional ingredients will clog the taste of the rice and negatively affect the taste of the sushi.
No vinegar with sake
Dressing for homemade sushi using sake is another recipe that can be called classic. Sake is a strong alcohol originally from Japan, made from rice and rice malt.
When heated, the alcohol evaporates, and only the aroma of the drink remains – soft, very rich and goes well with fish.
Composition:
- sake – 1 tbsp. l.;
- kombu seaweed (can be replaced with nori) – 1 sheet;
- water – 5 tbsp. L.;
- sugar – 1 tbsp. L.;
- change – 1 h. l.
How to do:
- Pour water into the saucepan.
- Place a sheet of seaweed in it. Turn on low heat.
- Bring water to a boil.
- As soon as it boils, remove the seaweed.
- Pour in sake, add salt and sugar. Stir thoroughly.
- Boil until sugar dissolves, stirring frequently. It is not necessary to bring the sake to a boil – the alcohol will evaporate from the strong heat.
Infusing sushi rice with sake makes the dish extremely flavorful. You can cook without seaweed – this option also exists, although it is less popular.
With fish sauce
The dressing for boiled rice for rolls can also include completely unusual ingredients. So, in some Asian countries they like to cook it with Thai fish sauce.
Composition:
- fish sauce – 2 tbsp. l.;
- water – 50 ml;
- sugar – 1 tsp. l.;
- salt (to taste).
Recipe:
- Mix all 4 ingredients in a small saucepan. You don’t have to add salt – it depends on how concentrated and salty the sauce is. It can vary greatly among different manufacturers.
- Place on low heat.
- Stirring continuously, wait until the sugar dissolves.
- Turn off the heat and stir again.
Due to its richness, this dressing can be used not only with rice for rolls. Cooked rice also works well as a regular side dish.
Honey dressing
You can also make a seasoning for rice using honey. In combination with apple cider vinegar, this product gives an interesting sweet and sour taste and rich aroma with a slight tartness.
This recipe for dressing sushi rice goes especially well with tuna and eel, but also works with regular salmon rolls.
Composition:
- honey (liquid) – 1 tbsp. l.;
- apple cider vinegar – 2 tbsp. l.;
- change – 1 h. l.
Recipe:
- Place a metal saucepan over low heat.
- Pour in vinegar and honey. Stirring thoroughly, cook until smooth.
- Add salt and stir again. If the dressing turns out to be too thick (this depends on the thickness of the honey), you can add a little water; this will not affect the taste.
- Boil for another 2-3 minutes.
- Turn off the heat and cool the dressing.
Roasted sesame paste goes well with fresh honey. In Japan, it is sometimes added to this honey dressing – 1 tbsp. l. will be sufficient. You can also replace apple cider vinegar with balsamic, this will give a more fruity aroma.
Colored rice for sushi and rolls
To season rice this way, you will have to cook it along with the rest of the ingredients. And either turmeric or the water in which the beets were boiled is used as a dye – it depends on what color you want the rice to be.
Composition:
- rice – 1 glass;
- water – 200 ml;
- rice vinegar – 1 tbsp. l.;
- turmeric – 1 tsp. (or beetroot broth – 2 tbsp.);
- sugar – 1 tsp. l.;
- change – 1 h. l.
Recipe:
- Boil the rice (pre-washed) for 20 minutes.
- Dilute turmeric in a spoon of water. If beet broth is used, it does not need to be diluted. Then add it to the rice.
- Immediately after this add salt and sugar.
- Boil the rice for another 5 minutes.
- Turn off the heat, but leave the rice to simmer for 10 minutes.
- Add rice vinegar and mix thoroughly.
A bright, unusual seasoning for rice for homemade sushi will become a real decoration for the holiday table. Moreover, children will certainly like this dish.
