Benefits and harms

Walnut sauce is one of the most high-calorie sauces. This sauce, in large quantities, is not recommended for those who are watching their figure.

But at the same time, all the fats contained in it are beneficial for the body. They strengthen hair and nails and maintain good skin condition.

All this is thanks to the vitamins A, C, E and B included in the composition, as well as the high Omega-3 content.

Nuts help lower blood cholesterol, reduce the risk of cardiovascular diseases, and improve immunity.

They are beneficial for human brain function and eye health. The sauce helps the body remove toxins. With the help of nut sauce you can improve digestion and normalize metabolism.

Walnut sauce is beneficial for people suffering from diabetes and atherosclerosis. Walnut-garlic sauce contains Omega-3 fatty polyunsaturated organic substances that take part in the formation of blood vessels.

Harm from the sauce may be an allergy to one type of nut or another. Eating large amounts of sauce at an early age can contribute to the development of psoriasis or eczema.

In general, each type of nut is useful and harmful in its own way. You need to know your body’s affinity for the types of nuts included in the sauce.

Garlic-nut sauce

Nut sauce for chicken with the addition of garlic will help add some piquancy to the dish. Preparing sauce for chicken at home is quite simple. It goes perfectly with white poultry and chicken fillet.


  • Garlic – 3 cloves.
  • Walnuts – 6 tbsp. l.
  • Lemon juice – 1 tbsp. l.
  • Basil/cilantro – 0.5 bunches each.
  • Vegetable oil – 1 tbsp. l.
  • Salt, pepper – to taste.

Don’t forget to sort through the nuts, you may get some partitions!

Peanut sauce recipe:

  1. Cut the garlic into small cubes and place in a blender along with the nuts.
  2. Pour in oil and lemon juice.
  3. Chop the greens a little and add to the rest of the ingredients.
  4. Beat everything until smooth, then add salt and pepper.

This sauce with walnuts and garlic can be considered a simplified Pesto sauce. And if you remove the greens and increase the volume of oil with lemon juice, you can also use it as a marinade for chicken.

Sauce more Georgian

This Georgian nut sauce with walnuts is called Bazhe. It can be served with any meat, poultry, fish and even vegetable side dish. What is important is that the nuts are not roasted for Bazhe.


  • Walnuts (shelled) – 1 cup;
  • Chili pepper – 0.5 pods
  • Cilantro – 3 sprigs;
  • Wine vinegar – 2 tsp;
  • Imeretian saffron – a pinch;
  • Salt – to taste.

How to cook:

  1. Wash the nuts, remove the partitions, and dry them slightly.
  2. Pass the chili pepper and garlic together with nuts through a meat grinder (through the attachment with the smallest holes).
  3. Chop the cilantro and, together with vinegar and saffron add to the resulting mass, add salt.
  4. Georgian sauce Bazhe is ready!

When you’ve put everything through the meat grinder, push the remainder with a piece of bread to save money! 

The classic recipe uses a meat grinder, but of course you can grind it with a blender. The end result is a thick paste that can be stored in the refrigerator. And if necessary, it is simply diluted with water to the desired consistency.

Almond sauce for meat

The almond meat sauce will take you a little time, but you will have to tinker with it. But it’s worth it, you will remember its delicate taste for a long time.

We will need:

  • Almonds – 100 gr.;
  • White bread – 2 slices
  • Chicken broth – 100 ml;
  • Lemon juice – 1 tsp;
  • Black raisins – 20 gr.;
  • Yolk – 1 pc.;
  • Butter – 40 gr.;
  • Salt, sugar – to taste.

How to cook:

  1. First, let’s peel the almonds; to do this, you need to boil them a little or soak them overnight.
  2. While the almonds are on the stove, slice and crust the bread.
  3. Then peel the almonds, put the bread on the fire in a saucepan with broth, you can immediately add salt and salt.
  4. As soon as you see that the bread has begun to dissolve, start beating with a blender directly in the saucepan.
  5. Then, in a separate container, beat the yolk with a small amount of broth or water.
  6. Then add some of the hot sauce, little by little, so that the yolk does not curdle, whisking all the while.
  7. After warming the yolk a little with the heat of the sauce, pour everything into the hot sauce without ceasing to work with the blender.
  8. When the sauce becomes homogeneous, remove it from the heat and begin adding butter into it, but using a whisk.
  9. Once the butter has dissolved, add lemon juice and chopped raisins and enjoy!

This sauce is usually served with young veal, rabbit, chicken fillet or any white meat.

Hazelnut sauce for fish

Nut sauce can also be used for fish. It is especially good with fish baked on coals or in the oven. Moreover, you can bake right in it.


  • Hazelnut – 1 cup;
  • Yolk – 1 pc.;
  • White bread – 2 slices;
  • Chicken broth – 150 ml;
  • Parsley or dill – 0.5 bunch;
  • Salt, sugar, white pepper to taste;
  • Cold water – 30 ml.

How to do:

  1. We blow off the hazelnuts a little and put them in a saucepan.
  2. Trim the crusts off the bread, chop and add to the hazelnuts.
  3. Pour in the broth, add salt and sugar, start boiling the nuts for about 5 minutes, then blend them.
  4. Separately, beat the yolk with water, add a little sauce to them and beat further.
  5. Then pour the yolk back into the main sauce, continuing to whisk all the time.
  6. Add ground white pepper and chopped parsley and you’re done!

If you heat the peppercorns in a dry frying pan and then crush them, the flavor will be brighter!

This is certainly not a classic sauce for fish, but it also has its place. We recommend using white pepper; it always goes well with fish.

For sushi

You can easily prepare this recipe for nut sauce for sushi at home. This recipe uses Mirin, what it is and what you can replace it with read here.


  • Cashews – 135 gr.;
  • Apple – 0.5 pcs.;
  • Mitsukan (rice vinegar) – 90 ml;
  • Soy sauce – 50 ml;
  • Mirin wine – 140 g.;
  • Garlic – 3 cloves;
  • Onions – 0.5 pcs.;
  • White sesame -70 gr.;
  • Vegetable oil – 450 ml.

Cooking method:

  1. Let’s prepare the ingredients: fry cashews and sesame seeds, chop the apple, onion and garlic, this will make it easier for the blender.
  2. Next, put it all in a glass of blender and beat, do not add any liquid yet.
  3. Beat until it forms a paste, pour vinegar, soy sauce and Mirin, beat a little more.
  4. All that remains is to pour in the oil in a thin stream without stopping the blender and the sauce is ready!

Chuka salad

Nut dressing for chuka salad is nothing more than Gamadari sauce. This recipe is easy to prepare at home. And it goes very well with any vegetables, whether they are in the form of a salad or grilled.


  • Soy sauce – 50 ml;
  • Mirin – 35 ml;
  • Mitsukan (rice wine) – 90 ml;
  • Sugar – 25 gr.;
  • Cashews (not fried) – 180 gr.;
  • Garlic – 3 cloves;
  • Red onion – 0.5 pcs.;
  • Mashed tomatoes – 40 gr.;
  • Tahini (sesame paste) – 60 gr.;
  • Granny Smith apples – 40 gr.;
  • Orange juice – 70 ml;
  • Vegetable oil – 400 ml.

Cooking method:

  1. Place all ingredients except oil in a blender glass and blend until smooth.
  2. Now you need to pour in the oil in a thin stream without stopping the blender.
  3. Place the resulting sauce in the refrigerator for 30 minutes until completely cooled.

Sesame for rolls

Chinese sesame sauce is another option for sauce for sushi, rolls and seafood, especially shrimp. The ingredients presented below are for 100 grams of sauce.


  • Sesame – 40 gr.;
  • Sesame oil – 2 teaspoons;
  • Water – 40 ml;
  • Soy sauce – 1 tsp;
  • Vinegar 6% – 0.3 h. l.;
  • Agar-agar – 1 h. l.;
  • Sugar – 1 tsp. without slide;
  • Salt to taste.

Cooking process:

  1.  First, beat the sesame seeds and sugar in a blender.
  2. Then pour in all the liquid ingredients and continue whisking.
  3. Separately dilute agar-agar or any thickener and add to the sauce.
  4. Blend everything again and put it in the refrigerator for about 1 hour.

We used agar-agar, a natural algae-based thickener. But you can also add starch diluted in a small amount of water.

Cashew sauce

This sauce is also called lean or vegan mayonnaise. It couldn’t be easier to prepare it at home.


  • Cashew – 100 gr.;
  • Mustard – 0.5 tsp;
  • Juice of half a lemon
  • Dried garlic – ¼ tsp;
  • Jerusalem artichoke juice – ¼ tsp. ;
  • Dill – 0.5 bunch;
  • Water – 0.5 cups;
  • Salt to taste.

Cooking method:

  1. Place the cashews, mustard, garlic, dill and Jerusalem artichoke juice into a blender and start blending.
  2. Gradually add water to the desired consistency, but do not forget that there will also be lemon juice.
  3. It’s time to add it, don’t squeeze it all out right away, test it for acid first.
  4. When you have achieved the desired thickness and acidity, you can add salt.

We recommend soaking cashews overnight, and Jerusalem artichoke juice can be replaced with sugar or any sweetener. Use it as a salad dressing or as a dipping sauce.

Creamy Peanut Pasta Sauce

This is a recipe for nut sauce with cream from Yulia Vysotskaya. It is advisable to use a large chopper bowl or a stationary blender.


  • Pine nuts – 20 gr.;
  • Walnuts – 160 gr.;
  • White breadcrumbs – 100 gr.;
  • Parmesan – 300 g.;
  • Garlic – 1 clove;
  • Milk – 150 ml;
  • Cream – 150 ml;
  • Olive oil – 5 tbsp. l.;
  • Ground chili pepper – 1 pinch;
  • Salt, pepper to taste

Cooking method:

  1. We send nuts, crackers, cheese (cut into cubes) and garlic to chop.
  2. When everything is crushed, pour in milk, cream and olive oil.
  3. All you have to do is add peppers and salt and the sauce is ready!

You will get a lot of sauce, enough for a whole pack of spaghetti. Based on this you can reduce the ingredients.

Tomato-nut sauce

This is the simplest nut sauce recipe.


  • Peanut butter – 1 tbsp. l.;
  • Krasnodar sauce – 100 gr.;
  • Garlic – 2 cloves;
  • Lemon juice – 1 tsp;
  • Homemade mustard – 1 tsp;
  • Honey – 1 tsp;
  • Salt, pepper – to taste.

Cooking method:

  1. It is better to pass the garlic through a press or grate it, so it will be more evenly distributed throughout the sauce.
  2. Melt honey or take liquid honey immediately and mix with all the ingredients of the sauce.
  3. The sauce is ready!

For this recipe, you can use tomato paste diluted with water or even ketchup, but with Krasnodar sauce it will be tastier. This sauce goes great with wings, especially if you drizzle a little sriracha sauce into it. This is certainly not spicy Buffalo sauce, but it goes well with chicken.

Sour cream and nut sauce

And lastly, another white walnut barbecue sauce. It is also not complicated and is somewhat similar to the Greek Dzatziki sauce.

We will need:

  • Walnuts – 100 gr.;
  • Cream – 500 g.;
  • Garlic – 5 cloves;
  • Dill – 0.5 bunch;
  • Cilantro – 0.5 bunches;

How to do:

  1. Chop the garlic a little and grind it with the nuts in a blender.
  2. Chop the greens and add them to the nuts along with the sour cream, mix everything well.
  3. Season with salt, pepper and a delicious sauce with nuts, sour cream and herbs is ready!
