Today we will teach you how to prepare the most delicious barbecue sauce with your own hands. Such sauces are suitable for barbecue made from lamb, pork or beef, as well as for lula kebab and chicken kebab.

Classic sauce like in a kebab shop

Krasnodar sauce

Kebab houses mostly prepare sauce from “Krasnodar” sauce This is probably the simplest barbecue sauce. After all, as usual, everything has to be done in haste. It’s good not only for barbecue, but also for French fries and as sauce for a burger.

We will need:

  • Sauce “Krasnodar” – 1 glass
  • Garlic – 1 clove
  • Half an onion
  • Parsley, dill 0.5 bunch each
  • Salt, sugar, ground pepper to taste

How to make the sauce:

  1. Chop the onion and herbs as finely as possible, grate the garlic and mix into the sauce.
  2. Pepper and, if necessary, add salt and sugar.
  3. Delicious homemade barbecue sauce is ready!

You can also make sauce from tomato juice. In this case, replace “Krasnodar” sauce  with a glass of tomato juice. Salt and sugar may not even be useful, since tomato juice usually already contains them.

Choose a good, proven juice, preferably with pulp. And in order for the onions to marinate with the acid of the sauce, let the sauce brew for at least half an hour. And the sauce made from tomato juice will only taste better!

Armenian tomato paste sauce with cilantro

Barbecue sauce made from tomato paste and herbs, most often cilantro, is considered Armenian. Armenian barbecue sauce made from tomato paste and cilantro, the recipe is also not complicated. For this reason, it is often made in cafes and kebab shops.

We will need:

  • Tomato paste – 10 tbsp. l.
  • Boiled water – 10 tbsp. l.
  • Sol – 1 h. l.
  • Sugar – 3 h. l.
  • Onion – 1 pc.
  • Garlic – 3 cloves
  • Ground black pepper – 1/2 tsp.
  • Dill, cilantro, parsley, 1/2 bunch each


  1. We dilute the tomato paste with water.
  2. Finely chop the onion and greens, pass the garlic through a press and add to the sauce.
  3.  Then add salt, sugar and pepper and mix well.
  4. Homemade shish kebab sauce made from tomato paste is ready!

This sauce for pork kebab is just the bomb! The slightly sweet and sour taste of the sauce neutralizes the fatty pork. And as you understand, preparing Armenian sauce is not difficult. This sauce with cilantro and tomato paste can be prepared without paste. And for example with ketchup.

It will be even faster and easier, just replace the pasta and water with a glass of ketchup. But be careful with salt and sugar, as ketchup already contains them. Especially if it homemade ketchup, you will already know its taste yourself.

Georgian tomato sauce

What Caucasian barbecue sauce without cilantro and hops or utskho-suneli ? That’s right, none. So we want to give you a recipe for Georgian barbecue sauce. Making it at home is as easy as the previous sauces.


  • Tomato paste – 1 cup
  • Boiled water – 1 glass
  • Adjika – 1 tsp. 
  • Garlic – 3 teeth.
  • Cilantro – 2 bunches
  • Khmeli-suneli – 2 h. l.
  • Ground black pepper – 1/4 tsp.
  • Vinegar (table 9%) – 1 tsp.
  • Salt – to taste

How to cook:

  1. Mix tomato paste, adjika, vinegar and water together.
  2. Add chopped cilantro and all the spices, mix well.
  3. Let it brew for 30 minutes and the Caucasian barbecue sauce with cilantro is ready!

This is a spicier sauce for shish kebab with cilantro. Although you can adjust the spiciness with the amount of adjika, which you can also prepare yourself. But it’s absolutely nothing without her, it’s she and khmeli-suneli that make it Georgian.

White sauce

You can often find unusual white barbecue sauce in kebab shops. It is prepared from sour cream with mayonnaise and of course with herbs and garlic. But it contains another interesting ingredient – walnuts.

Mayonnaise can be prepared homemade and even made diet. This sauce is most suitable for chicken kebab or grilled chicken.


  • Cream and mayonnaise 100 g each.
  • Cilantro – 1 bunch
  • Walnuts – 50 gr.
  • Garlic – 2 cloves
  • Salt and pepper to taste

How to do:

  1. First of all, mix mayonnaise with sour cream.
  2. Chop the cilantro; you can crush the walnuts in a mortar or beat them with a rolling pin and wrap them in a napkin.
  3. Stir cilantro into the sour cream and mayonnaise mixture and squeeze the garlic into it through a press.
  4. Add ground pepper, salt and let the sauce brew a little.

It is believed that this white sauce came to us from the Caucasus. Most likely due to cilantro and walnuts, which are often used in Caucasian cuisine. Therefore, we do not recommend replacing cilantro with other greens.

There are different variations of this sauce, for example it can be made from yogurt or yogurt. It doesn’t have to be eaten with meat; it’s also good with fresh vegetables. Just use it as dip and dip sliced ​​cucumbers, carrots and celery into it.
