Recipes of delicious sauces for pork, jelly, tongue and brawn

Today we want to look at sauces for boiled pork, turkey and any boiled or baked meat. And since jellied meat is essentially boiled meat, these sauces are equally suitable for both dishes. Besides, brawn, also known as saltison, will be even tastier with such sauces. 

Mustard sauce

Option for serving boiled pork with mustard sauce

Mustard with boiled pork and jellied meat is a classic! So let’s make a delicious sauce out of it.

Composition:

  • table mustard – 1 tsp;
  • Dijon mustard – 1 tsp;
  • garlic – a clove;
  • soy sauce – 1 tbsp. l.;
  • mayonnaise – 1.5 tsp. l.;
  • salt, ground coriander to taste.

How to do:

  1. The main thing is to chop the garlic as finely as possible; it is better to use a garlic press.
  2. Then mix it with the rest of the ingredients and add salt.
  3. Mustard-mayonnaise sauce is ready!

You should not use a blender in this recipe; Dijon (grainy) mustard must remain whole. According to my taste, for jellied meat or jelly, I would remove mayonnaise. Experiment, friends!

Horseradish and sour cream sauce

Perhaps grated horseradish for boiled pork or brawn is no less popular than Russian mustard. This sauce is also good with jellied meat.

Ingredients:

  • horseradish (root) grated – 100 gr.;
  • cream – 100 g.;
  • vinegar 9% – 1 tsp. l.;
  • salt, sugar to taste.

How to cook:

  1. You need 100 grams of horseradish already grated, so take more initially.
  2. Next, mix it with sour cream and add vinegar, but not all of it. Try and understand the amount of acid in the sauce you need.
  3. Add salt and sugar and let the sauce sit in the refrigerator for about 30 minutes.

Be careful when grating horseradish, it “hits” a lot. by the eyes. It’s better to use a blender, because you need to chop the horseradish well. The sauce should be thick and smooth, like dipping sauce for dipping.

Nut sauce for boiled pork

Peanut sauce

Making this spread sauce at home is not difficult. A minimum of time and quantity of products will also be required.

We will need:

  • walnuts – 100 gr.;
  • garlic – 2 cloves;
  • greens – 0.5 bunch;
  • lemon juice – 2 tsp;
  • vegetable oil – 1 tbsp. l.;
  • salt, pepper to taste.

Recipe:

  1. Peel the nuts and fry over low heat until a nutty aroma appears.
  2. While the nuts are cooling, chop the garlic using a grater or garlic press, and chop the greens.
  3. Next, you need to grind the nuts in a mortar, beat them with a rolling pin, wrap them in a napkin, or blend them.
  4. Then mix all the ingredients, this can also be done in a blender.
  5. Add salt and pepper and the sauce is ready!

Using a blender you can achieve any consistency. You can also leave some of the nuts finely chopped and then mix them with the sauce. This nut sauce goes with jellied meat no worse than boiled pork.

Cranberry Sauce

This sauce is usually served with boiled pork or boiled tongue. But it will be no less good with a piece of fried meat.

Composition:

  • cranberries – 200 gr.;
  • sugar – 2 tbsp. l. with a slide;
  • water – 200 ml.;
  • starch – 1 tsp. l.;
  • salt to taste.

Step by step recipe:

  1. Place the cranberries, sugar and water in a saucepan on the fire and wait for it to boil.
  2. After boiling, stirring occasionally, wait for the sugar to dissolve and the sauce to reduce by half.
  3. At this time, dilute the starch in water.
  4. Then add it to the sauce, a little at a time, until the desired thickness and beat everything with a blender.
  5. Then rub the sauce through a sieve, add salt and the cranberry sauce is ready!

If the sauce is too thick, add water and vice versa!

With honey and mustard

This may surprise you, but sauce with honey is very good for jellied meat.

We will need:

  • honey – 2 tbsp. l.;
  • homemade mustard – 2 tsp;
  • Vegetable oil – 1 tbsp. l.;
  • Lemon juice – 1 tsp;
  • Garlic – 1 clove;
  • Hot pepper – 1 pinch to taste;
  • Salt, black pepper to taste.

How to do:

  1. Melt honey and mix with mustard and lemon juice.
  2. Chop the garlic and add it to the oil along with hot and ground pepper and mix.
  3. Combine all ingredients of the sauce and add salt if necessary.
  4. Honey mustard sauce for jellied meat is ready!

Just try spreading it on jellied meat or aspic.

By the way, if you add a lot of oil and a drop of vinegar, you will get an excellent salad dressing.

Horseradish jellied sauce

Horseradish and beet sauce

We have already shown you sour cream sauce with horseradish for boiled pork, and now red horseradish sauce for jellied meat. It is also called beetroot horseradish or beet horseradish.

Composition:

  • horseradish root – 200 gr.;
  • sugar – 1 tbsp. L.;
  • beets – 0.5 pcs.;
  • apple cider vinegar – 1 tbsp. l.;
  • vegetable oil – 1 tbsp. l.;
  • salt, pepper to taste.

Cooking process:

  1. Grind horseradish in any way (the main thing, as we already wrote, is to take care of your eyes).
  2. It is better to bake the beets (you can boil them) and grate them on the finest grater.
  3. Mix with horseradish, sugar and vinegar until the sugar dissolves.
  4. Salt, pepper, mix and add oil, mix again.
  5. Horseradish sauce with beets is ready!

Let’s be honest, beets are here more for the beautiful color of the sauce, but they also add their own taste. White and red sauces with horseradish look beautiful when served.

Garlic sauce for jellied meat

Jalapeño with garlic

And now we will tell you how to prepare a spicy sauce for spicy lovers. After all, this green jalapeño sauce.

We will need:

  • Garlic – 2 cloves;
  • Jalapeno pepper – 1 pc.;
  • Olive oil – 2 tbsp. l.;
  • Salt and pepper to taste. 

How to do:

  1. The first method: grind everything in a blender to a homogeneous paste.
  2. Second method: chop everything with a knife, leaving the garlic and pepper in pieces.

Of course, you can “play” with the amount of ingredients, and the oil is not necessarily olive oil, but it has a different flavor. If desired, you can add your favorite herbs or vinegar. And of course replace jalapeno with chili, but who needs any spiciness?
