What is Dijon mustard
Dijon mustard is mustard prepared in a special way and has an excellent taste and aroma. This sauce contains natural ingredients: mustard powder and milk powder. Coriander, cumin, salt and sugar are used as spices.
The sauce has a light golden color and a sourish-spicy taste. Its consistency becomes softer after cooling. Mustard made according to this recipe goes well with fish, meat, vegetables, and also goes well with rice, potatoes and eggs.
The mustard seeds included in the sauce cannot be cooked for a long time. If you do not boil them, they will completely retain their shape and fresh taste.
History of appearance
Dijon mustard appeared in the 6th century, but it became widely used only in the 19th century. It was invented by the French chef Jean-Louis Martin for the sauce he prepared in the city of Dijon. He began mixing white and black pepper, salt, cloves, dry garlic and onion.
Only after this, in 1871, did he try salting it, adding lemon juice and a little olive oil, which led to the creation of the Dijon version of mustard.
Grain mustard has a very sharp, piquant taste. It can also be used as an additive to various dishes; it goes well with meat.
Benefits and harms
French mustard has a beneficial effect on the digestive system, increases appetite and stimulates the gallbladder. The substances included in its composition have a beneficial effect on the human body.
For example, mustard seed has antioxidant properties, is a source of vitamins A, B, E, C, D, and also contains a large amount of microelements, iron, selenium and manganese.
However, we should not forget that mustard is a seasoning that can cause allergies.
What is the difference between Dijon mustard and regular and French mustard?
Dijon mustard comes in several varieties. The most popular of them are Dijon grain and Dijon white, which differ only in the addition of additional ingredients.
Dijon white mustard, as the name suggests, is made from cream and white wine. This type of mustard is also used in salads and served with white meat.
Dijon grain mustard is made with the addition of dry red wine, honey and spices. This type of mustard is suitable for both salads and meat.
Dijon mustard differs from French mustard in that it has fewer grains. In general, Dijon mustard can be mixed with any type of sauce, but in France they prefer the classic one.
Dijon mustard differs from regular mustard in that the grains in it are not crushed. It goes well with fish, meat and vegetable dishes.
The main difference in preparing Dijon mustard compared to other types is that it is prepared using whole grains.

Where to add Dijon mustard
Dijon mustard is added to various sauces and dressings for salads and snacks, as well as various types of dough, pizza, meat and fish dishes.
Unlike Russian mustard, Dijon mustard has a more pronounced pungent taste and spicy aroma, although it is somewhat more delicate in color.
Meat and poultry are baked in it, served as sauce for boiled pork and boiled tongue.
Mustard and meat are like brother and sister!
The taste of the sauce depends on the quality and quantity of Dijon mustard, so it is often not a pure sauce that is used, but a mixture of several types.
A barbecue marinade based on Dijon mustard does not have a pronounced mustard taste, but gives the meat an appetizing and delicate nutty aroma.
A sauce made from French Dijon mustard can be used in preparing any dishes, but it is still preferable to prepare it yourself by adding various spices and herbs.
Salad with Dijon mustard dressing is usually served with fish or meat dishes, but is also suitable for vegetable salads. But it is not recommended to use it as a sauce for pasta or pizza.
You can also prepare the famous vinaigrette sauce based on mustard. And also a lot of piquant sauces.
What can be replaced
Dijon mustard is a product that cannot always replace mustard powder in taste and aroma. This can be done in the preparation of some sauces, but is mainly used as an additive to various dishes.
You can replace it with the following products: Russian mustard will taste a little different from French mustard, but it will be quite suitable.
Russian mustard paste (it is similar to mustard): suitable for preparing meat dishes, salads, meat rolls; French mustard: it is the hottest of all existing types of mustard, but more delicate and softer in taste than Dijon.
Grainy mustard is typically used for marinating meats, although it is also suitable for sandwiches, salads and sauces. It is also great as an additive to other types of mustard.
Unlike Dijon, grainy is not as hot and spicy, so it is suitable for people with a delicate digestive system; Provençal (French Provençal) mustard is milder in taste and consistency than Dijon.
It is used instead in preparing various dishes: salads, sauces and meat rolls.
To add special piquancy, spices such as rosemary, marjoram, thyme or basil are added to these dishes. French mustard is best suited to meat, seafood, and is also added to various salads or pickles.
Russian mustard is not recommended for consumption by people with stomach problems.
How to select and store
Dijon mustard should have a thick consistency with a specific sweet and sour taste with spicy notes, grains and mustard aroma.
If the mustard grains become large, this indicates that the sauce is expired. When purchasing, you need to pay attention to the appearance of the sauce: it must be homogeneous, free from impurities and pieces of other products.
Unscrupulous manufacturers add various preservatives, dyes, flavors and thickeners to the sauce. Sauces cannot retain their properties for a long time and should be present in the kitchen of every housewife.
In order not to spoil the quality of the product, when purchasing sauce in a store, you need to pay attention to the expiration date, which is no more than 1 year.
Dijon mustard has a shelf life of 9 months, but if the sauce is in a dark, airtight container, it can remain usable for a year.
