Classic recipe

Tkemali is a sweet and sour sauce! This means that gooseberries are the best choice instead of plums. Let’s check it out.

We will need:

  • Gooseberries – 2 kg
  • Dill – 1 bunch
  • Mint – 1/2 bunch
  • Cilantro – 1/2 bunch
  • Garlic – 5 cloves
  • Ground coriander – 1-2 tsp.
  • Sol – 1 h. l.
  • Sugar – 2 tbsp. l. 

Cooking process:

  1. We wash the berries and remove leaves as necessary.
  2. Peel the garlic and grate it or chop it in any way.
  3. Finely chop the greens.
  4. Mix all the ingredients in a saucepan and puree with a blender.
  5. Place on the fire and bring to a boil, then simmer for 10-20 minutes, depending on the thickness you want.
  6. At this time, add salt, sugar and spices, bringing to the desired taste.

Next, all that remains is to pour it into jars if you plan to roll up the gooseberry tkemali for the winter. To do this, prepare the container by sterilizing it and the lids in advance. Wrap it in something warm and leave the jars upside down to cool.

Spicy sauce for meat

 

Are there people who like spicy food or sweet and sour with meat? Then this spicy gooseberry sauce is for you. It is somewhat similar to tkemali from thorns.

Composition:

  • Green or red gooseberries – 1 kgGooseberry tkemali for meat
  • Hot (bitter) pepper – 1 pod
  • Gooseberry-colored basil – 1/2 bunch
  • Garlic – 5-6 cloves
  • Salt, sugar, ground pepper to taste
  • Vegetable oil – 1-2 tbsp. l.

Recipe for spicy gooseberry tkemali:

  1. Place gooseberries and peppers in pans and add a little water to half the level of the berries.
  2. Place on the fire and wait for it to boil, then simmer for about ten minutes over low heat.
  3. At this time, grind the garlic and basil in a blender, adding oil for binding.
  4. Mix the spices with the sauce and blend with a blender.
  5. If you don’t like seeds in the sauce, then before adding garlic and basil, you can put the gooseberries on a sieve and rub them, then add spices and puree them with a blender.

  3. Add salt, sugar, utskho-suneli.
  4. Mix everything thoroughly and let it sit in the refrigerator at least overnight.
