How to make cucumber relish sauce, what it is eaten with and where it is added

Relish sauce

Relish is a sauce made from pickled cucumbers with the addition of other vegetables or it can be a sauce made from fruits. Most often finely chopped into cubes. Translated from English it means “taste”, “seasoning” or simply “find pleasure.”

Most often used as cucumber sauce for French dogs or, more simply, hot dog sauce. Basically, relish sauce is prepared with cucumbers and mustard, sometimes with ketchup. The sauce is made from pickled or marinated cucumbers, and sometimes from fresh ones.

Classic recipe

 

We will prepare it from pickled cucumbers with mustard. The recipe is not complicated, but requires some simple steps. The relish in this recipe is spicy, but that’s up to your preference.

If you don’t like it spicy, just don’t add the chili. Try making the sauce with pickled cucumbers, it will taste completely different.

Composition:

  • Pickled cucumbers (medium length) – 2 pcs.
  • Red bell pepper – 0.5 pcs.
  • Onions – 1 pc.
  • Celery stalk – 2 pcs.
  • Chili pepper – 1 pc.
  • Sugar – 1 tbsp. l.
  • Wine (rice) vinegar – 100 ml.
  • Mustard – 1 or 2 tsp. depending on the severity
  • Salt to taste.

How to cook:

  1. Peel celery and cucumbers using a housekeeper. remove the skin, then cut into small cubes.
  2. It is advisable to chop the onions and peppers into the same cube (the chili can be cut smaller).
  3. Pour vinegar into a saucepan and dissolve sugar in it, add mustard, stir.
  4. Pour in the vegetables and stir occasionally over low heat for about ten minutes.
  5. Let the sauce cool and the cucumber sauce for hot dogs is ready!

This sauce is good for French dogs and more. Simply spread it on a piece of bread or make a ham sandwich with it. This will be something new than pouring ketchup on it.

Of course, this is not all that relish sauce is eaten with. Add it to unleavened boiled chicken breast, or indeed to any meat or country-style potatoes. It goes well with white fish and, by the way, is very similar to Scandinavian cucumber sauce.

Tomato relish

 

Relish with tomatoes and onions, boiled down to ketchup, is something. In addition, you can roll up this relish sauce for the winter and enjoy it all winter, adding it as burger sauce.

We will need:

  • Tomatoes – 2 kg
  • Chili pepper – 1-2 pods
  • Onions – 0.5 kg
  • Salt – 1 tbsp. l.
  • Powdered mustard – 1 tbsp. l.
  • Wine vinegar – 200 ml
  • Sugar – 200 gr

How to do:

  1. Cut the onions and tomatoes into any size (if desired, you can remove the skin from the tomatoes).
  2. Chop the chili pepper into rings and put everything in a saucepan with a thick bottom.
  3. Add salt, sugar, mustard and vinegar and bring to a boil.
  4. Then reduce the heat and cook, stirring occasionally, for about three hours.
  5. Tomato relish, ready!

There is also an option where you don’t need to simmer the sauce for three hours. In this recipe you need to finely chop the tomatoes and onions, salt them and mix. Then leave for 12 hours, then drain the liquid and cook.

At the end of cooking, simply add starch for thickness. But the first option is tastier, the tomatoes are more caramelized and the texture of the sauce is more pleasant.

If you prepare it for the winter, then take only three times more. Once the sauce is ready, pour it into sterilized jars, turn them over and cover with something warm. Then put it in a cool place.

And now about how to make cucumber sauce at home with tomatoes. Let’s combine, so to speak, the first two recipes and get another excellent sauce for a hot dog.

Ingredients:

  • Pickled cucumbers – 200 gr.
  • Tomatoes – 0.5 kg
  • Onions – 2 pcs.
  • Chili pepper – 1 small pod
  • Russian mustard – 0.5 tbsp. l.
  • Garlic – 3 cloves
  • Any greens – 0.5 bunch
  • Unscented vegetable oil – 3 tbsp. l.
  • Sol – 0.5 h. l.
  • Sugar – 1.5 tbsp. l.

How to make cucumber sauce:

  1. Finely chop the onion and lightly sauté it in oil.
  2. We also chop the vegetables into small cubes and add them to the onions.
  3. Bring to a boil over high heat and add mustard, salt, sugar and garlic.
  4. Stir until the spices dissolve for about fifteen minutes and add chopped herbs.
  5. French dog sauce with pickled cucumbers and tomatoes is ready!

As you can see, this recipe for making cucumber sauce is the simplest. But it’s up to you to choose which cucumber sauce is the most delicious; be sure to try making them all.

It is also possible to make relish sauce for the winter from cucumbers and tomatoes. Do everything as in the previous recipe, and also look at our recipes for pickled cucumber sauces.

If you want to make a sweeter cucumber relish, replace the pickled cucumbers with fresh ones. Remove the chili pepper, garlic and mustard, and add 2 more tablespoons of sugar. Otherwise, do everything as in the recipe.

What do they eat with?

As we have already written, according to the classics, relish is eaten with hot dogs and French dogs. Added to burgers and even shawarma. After all, vegetables and meat always go well together.

Therefore, any barbecue, fried chicken, cutlets or chops, veal steaks, you can eat relish sauce with all this.

And also with potato pancakes or with French fries, dipping into it as if in deep sauce. Mashed potatoes topped with this sauce turn out very tasty. And if you mix boiled diced potatoes and relish, you get an awesome salad.

Any snacks, be it chips, nuggets, croutons or nachos. Eat it as a snack with fried potatoes, like a salad. Spread on bread with sausage, serve as sauce for boiled pork. It is almost universal!
