Green plum sauce

Tkemali is a sauce made from plums, the variety of which is also called ombalo – pennyroyal. In this article we will tell you how to make tkemali from green or unripe plums, it is also called white plum sauce.

Green plum sauce recipe

Ingredients :

  • Green plum (unripe) – 1 kg 
  • Hot pepper (preferably green) – 1 pod
  • Garlic – 1 head 
  • Cilantro – 1 bunch 
  • Dill – 1 bunch
  • Mint (preferably ombalo) – 1/2 bunch
  • Ground coriander – 1 tsp.
  • Suneli hops – 1 tsp
  • Sugar (depending on the acidity of the plum) 50-100 g
  • Salt – to taste, about 1 tsp.

Method for preparing sauce from unripe plums:

  1. Wash the plums, remove any rotten ones, remove the beans, and cut them into slices. If you don’t want to peel the plums, you can then strain the sauce through a sieve.
  2. We also wash the pepper and remove the stalks and seeds, although if you like it spicier, leave the seeds, they contain all the spiciness. We also cut the peppers into pieces.
  3. Peel the garlic and finely chop it, you can press it through a garlic press or grate it.
  4. Wash the grass (greens), dry it and finely chop it.
  5. Next, put the plums in a saucepan with a thick bottom and fill with water so that the water only slightly covers the plums. Bring to a boil and reduce to low. Cook for 10 minutes.
  6. Then, if the plums were left with pits, then rub them through a sieve. If they have been cleaned, then grind everything with a blender and again set to simmer on low heat.
  7. Add garlic and all the herbs, except dill, simmer for about 5 minutes, if desired, you can go through the blender again.
  8. Next, add salt, sugar and spices. We taste and adjust according to our taste preference.
  9. Add dill and cook until slightly thickened for a couple more minutes. Remember to stir constantly, as the sauce contains sugar and can burn.
  10. The sauce from unripe plums is ready! Bon appetit!

Sterilizing jars in the oven

Green plum sauce keeps well in jars all winter. To do this, you need to prepare and sterilize the jars and lids in advance.

Can be made in the oven, steamed or even microwaved. Next, if you just cooked the green plum sauce and it is still hot, pour it into jars.

Roll up, turn the jars upside down and cover with a warm blanket. We wait until the jars have cooled and put the white plum sauce in a cool place – a cellar, pantry or refrigerator.
