- Cook until the peppers soften, then rub through a sieve.
- Place the resulting mass on the fire again and bring to a boil.
- If the sauce is thick, you can dilute it with boiling water, but bring it to a boil again.
- At the very end, dilute the starch in one hundred milliliters of cold water and add to the sauce.
- Bring to a boil again and the sauce is ready!
This simple, but simply bomb sauce is perfect for meat, poultry and fish. Yes, it goes with everything, even on a sandwich, even on scrambled eggs. For the more daring, you can use it as dip sauce and dip chips or nachos in it.
Use it as a sauce for boiled tongue or boiled pork.
Jalapeño Cheese Sauce with Bacon
This sauce can also be classified as a dip, but it all depends on the consistency you make. We provide the ingredients for a very thick sauce, by the way, just like in a movie theater. For French fries, you can’t think of a better one. It is made on the basis of bechamel sauce.
We will need:
- Jalapeno pepper – 2 pcs.
- Cream – 100 ml
- Cream cheese in a jar – 100 gr.
- Hard cheese – 100 gr.
- Bacon – 100 gr.
- Muka – 1 h. l.
- Butter – 1 tbsp. l.
How to prepare the sauce:
- We chop the bacon and jalapeno into small cubes, but this is not for everyone, you can do larger ones.
- Melt the butter in a saucepan with a thick bottom, then add flour and stir, you get Roux sauce.
- Then pour in the cream and stir until thickened, add creamy processed cheese.
- As soon as the sauce has become homogeneous, add the grated hard cheese, stir all the time and cook over low heat.
- We get practically cheese bechamel, all that remains is to add bacon and jalapeno.
- Stir and the jalapeno and bacon cheese sauce is ready!
You can also use pickled jalapenos in this sauce, but you can use any cheese, essentially. You can even use several hard varieties, the main thing is that they melt well. As in fondue sauce.
Another option is to fry the bacon in advance until crispy and then add it to the sauce. Naturally, you need to chop it first, then the sauce will have a crunch. And if you add paprika, the color will be rich orange, like Cheddar cheese.
Pickled Jalapeño and Pineapple Sauce
This sauce is a variation on the Thai theme pineapple salsa, but of course it is spicier and not sweet . You can make a sauce from pickled and fresh jalapenos, it won’t really affect the taste.
We will need:
- Pineapple – 1/2 pcs.
- Jalapeno pepper – 1-2 pcs.
- Garlic – 1 clove
- Lime juice – 1 tsp
- Green basil – 0.5 bunch
- Fresh cilantro – 0.5 bunch
- Extra virgin olive oil – 1 tbsp. l.
- Salt to taste
How to make the sauce:
- Chop the pineapple and pepper into small cubes.
- Press the garlic through a press.
- We remove the stems from the greens and finely chop them.
- Mix all the ingredients, add salt, add lime juice and oil.
- The sauce is ready!
This sauce is perfect for shrimp and seafood. Of course, lime juice can be replaced with lemon juice, but lime here is more Thai. You can also make the sauce with mango or avocado. Also try combining all these ingredients in one sauce.
Jalapeño sauce for meat
For lovers of spicy steaks, this sauce is simply “fire”! But it is good not only for meat, but also for chicken, especially for unleavened chicken breast. Pour it over sausages or just boiled potatoes and it will be super.
Composition:
- Jalapeno pepper – 2 pcs.
- Garlic – 3 cloves
- Cilantro – 1 bunch
- Parsley – 1 bunch
- Lime juice – 2 tbsp. l.
- Olive oil – 1 tbsp. l.
- Salt to taste
Cooking process:
- First you need to roast the peppers, ideally on coals, but you can also roast them in the oven or just on gas.
- Then we peel the skin and cut off the stalks, cut into rings.
- Separate the parsley leaves from the stems, you can add the cilantro with the stems and place it in a blender, along with the pepper and other ingredients.
- Punch to the desired consistency and add some salt if necessary, the sauce is ready!
It is quite possible to replace fresh pepper with pickled one. Sauce with pickled jalapenos for meat would be just as good. And you can even say that this is a sauce a la chimichurri, which is also served with meat. And it goes just as well with country-style potatoes.
