In this article we will teach you how to make shawarma sauce at home. We’ll tell you what kinds of sauces there are, and let’s start with the sauce as they make it in the stalls, because it is the most familiar to us.

Of course, initially we love store-bought shawarma. And everyone knows where it is prepared tastier and with different sauces. But basically the composition is approximately the same. Let’s try to make shawarma sauce, like in the stalls.

What is it made from:

  • Mayonnaise – 50 gr.
  • Cream – 100 g.
  • Garlic – 2 cloves
  • A pinch of black pepper.
  • Salt to taste

How to make the sauce:

  1. Peel the garlic and press it through a garlic press or three on a grater.
  2. Mix mayonnaise and sour cream to form a single sauce.
  3. Add garlic, pepper and salt to taste.

This is the simple white garlic sauce they add to shawarma at the stalls. Of course, there are a lot of options and unscrupulous shawarmists simply add mayonnaise, but that’s a different story.

Now everything has changed and shawarma sellers began to fight for buyers. Accordingly, the quality and taste of the sauce have improved. They add herbs, lemon juice, and paprika. They began to make a sauce based on homemade mayonnaise. But many stalls have grown into cafes.

There is also an option for red sauce. Next we will tell you how to make tomato sauce for shawarma.

Classic red sauce

If we are talking about sauces for shawarma, as in tents, then of course the sauces are simple. Nevertheless, we will consider them too. Don’t worry, it will get more interesting later. And now tomato sauce for shawarma, just like in a regular stall at any market.

Composition:

  • Tomato sauce “Krasnodar” – 5 tbsp. l.
  • Apple cider vinegar – 1 tsp.
  • Vegetable oil – 1 tsp.
  • Any greens – 1 tbsp. l.
  • Onion – 1 tbsp. l.
  • Hmeli-suneli – pinch
  • Salt and pepper as desired

How to cook:

Our recipe is improved and therefore tastier. For this we use “Krasnodar” sauce and pickled onions.

  1. Finely chop the onion and add apple cider vinegar, leave for 5-10 minutes.
  2. At this time, pour oil into the pan and add tomato sauce.
  3. After heating for a couple of minutes, add spices and set to cool.
  4. After cooling, add onion and chopped herbs and mix.
  5. Salt, pepper and the red sauce is ready!

Of course, you can simply dilute the tomato paste with water and add the rest of the ingredients. They probably still do this in some stalls.

This sauce can be used both hot and cold, and not only with shawarma. It is good for any fast food, for example for French fries.

Kefir sauce

Kefir sauce for shawarma

Shawarma sauce made with kefir is one of the classic options. This spice highlights the oriental taste well.

We will need:

  • Kefir – 0.5 cups
  • Sour cream – 3 tbsp. l.
  • Mayonnaise – 3 tbsp. l.
  • Garlic – 2 cloves
  • Khmeli-suneli – 1 pinch
  • Curry seasoning – 1 pinch
  • Salt to taste

How to do:

  1. Let’s start with the garlic, peel and chop it.
  2. Mix sour cream, mayonnaise and kefir in a container.
  3. Add garlic and spices to this mixture.
  4. Mix everything well and add salt.
  5. Shawarma sauce with kefir is ready!

Try making shawarma sauce from kefir, it will dilute the fat content of sour cream and mayonnaise. This is exactly the sauce that is used to pour shawarma on top; its consistency allows this to be done. Don’t forget to let it brew for a couple of hours, or better yet, overnight.

Sauce for shawarma in St. Petersburg

Shawarma in St. Petersburg

The sauce for shawarma in St. Petersburg (or shawarma?) is something! For me, this is the most delicious sauce. I would say the best shawarma sauce! The same shawarma sauce is real, like in the stalls of St. Petersburg. And the shawarma sauce is prepared from fermented baked milk instead of kefir.

Composition:

  • Ryazhenka – 100 ml
  • Mayonnaise – 100 ml
  • Cream – 100 ml
  • Garlic – 3-5 cloves
  • Lemon juice – 1 tsp.
  • Khmeli-suneli – 0.3 h. l.
  • Turmeric – 0.3 tsp. l.
  • Paprika – 1 tsp
  • Sol – 0.3 h. l.
  • Sugar – a pinch

Step-by-step recipe for St. Petersburg shawarma sauce:

Pour all the liquid ingredients for the sauce into one bowl.

Turkish sauce

Now let’s try to prepare an authentic Arabic shawarma sauce. This shawarma sauce is real, a recipe from Turkey, the birthplace of döner kebab. And now about the sauce in Turkish shawarma. According to most residents of the Middle East, this is the most correct sauce for shawarma.

We will need:

  • Sour cream – 5 tbsp. l.
  • Mayonnaise – 5 tbsp. l.
  • Adjika – 3 tbsp. l.
  • Cilantro – 1/2 bunch
  • Garlic 2-3 cloves
  • Khmeli-suneli – 1/2 h. l.
  • Walnut – 1 tsp.

Turkish cooking recipe:

  1. Press the garlic through a garlic press, so it will be finely chopped in the blender.
  2. Then add it to sour cream with mayonnaise and herbs, and add nuts to it.
  3. After a couple of minutes of beating, add adjika and spices, but it’s better to mix everything by hand, so the sauce will be thicker.
  4. Taste for salt and let the sauce sit for a couple of hours.
  5. The classic sauce for Turkish shawarma is ready!

This is the original shawarma sauce, as they do in Turkey and most of the Arab countries. In general, a sauce made by yourself, and even with an oriental taste, is just a bomb!

Garlic sauce

Garlic sauce for shawarma

Garlic is included in almost all shawarma sauces. But this white garlic sauce is just loaded with garlic flavor. Its spicy taste goes very well with chicken shawarma. This is a simple sauce recipe that anyone can make.

We will need:

  • Garlic – 6 cloves
  • Boiled yolk – 4 pcs.
  • Kefir – 200 ml.
  • Sunflower oil – 50 ml.
  • Dill – 0.5 bunch
  • Ground coriander – a pinch
  • Salt, pepper to your taste

How to cook:

  1. Chop the garlic using any method and add it to the oil along with the spices.
  2. While the oil helps the spices “open up” and get enough of the taste of garlic, mash the yolks with a fork.
  3. Finely chop the dill and add to the oil with garlic.
  4. Mix everything together with kefir and mix well until combined and add salt.
  5. Kefir-garlic sauce for shawarma is ready!

This is another version of the sauce, like in the stalls. It is white, garlicky, very fast and delicious!

Paired with chicken and vegetables, it’s simply finger-licking good. In addition, this sauce is made with kefir, which is healthier than store-bought mayonnaise. Although you can make healthy mayonnaise with your own hands.

Kefir-sour cream

Sour cream shawarma sauce

We can say that this is a pp sauce. Only then should you use low-fat sour cream. We will also make shawarma sauce with pickled cucumber, or rather pickled cucumber, but this is a matter of taste. And most importantly, it is prepared without mayonnaise.

We will need:

  • Sour cream – 3 tbsp. l.
  • Pickled gherkin – 3-5 pcs.
  • Dill – 1/3 bunch
  • Kefir — 50 ml.
  • Garlic – 4 cloves
  • Ground black pepper – a pinch
  • Salt – on the tip of a knife

Cooking process:

  1. Grate the cucumbers and garlic or chop them very finely, like dill.
  2. Mix everything into a single mass, without a blender, with a fork, salt and pepper to your taste.
  3. Let it brew and the sour cream shawarma sauce is ready!

For beauty, tint it with paprika or turmeric. Kefir sauce with sour cream is also perfect for village-style potatoes!

Yogurt sauce

We will prepare shawarma sauce from Greek yogurt. It is not difficult to prepare it at home. Because the shawarma sauce recipe is simple and the ingredients are available!

We will need:

  • Greek yogurt – 100 ml
  • Dill – 0.3 bunch
  • Garlic – 1 clove
  • Lemon juice – 1 tsp.
  • Salt, pepper to taste

Process for preparing shawarma sauce with yogurt:

  1. Finely chop the garlic and dill and add to the yogurt.
  2. Add sourness with lemon juice and pepper, mix.
  3. Add some salt and the diet shawarma sauce is ready!

If you are not very afraid of calories, you can add a drop of oil. Add grated fresh cucumber here and you have Greek sauce for gyros –Tzatziki.

Green sauce

Green Spinach and Yogurt Dip

Another fitness sauce for shawarma that you can make at home. This dressing is suitable for chicken shawarma or you can simply pour it over chicken breast. So loved by people on a diet and fitness athletes.

Ingredients for the sauce:

  • Spinach – 1 bunch
  • Yogurt – 1 glass
  • Garlic – 1-2 cloves
  • Salt as desired

How to do:

  1. Everything is put into a blender glass and beaten thoroughly for 3-5 minutes.
  2. Super shawarma sauce is ready!

Frozen spinach can also be used. Also try adding lemon juice to the shawarma sauce. In addition, you can add some spice in the form of a pinch of chili pepper. Or make it piquant sauce with Dijon mustard.

Spicy sauce

And finally, for those who like something spicy, tomato paste sauce. You can use tomato sauce, ketchup or pureed tomatoes. It is suitable except for shawarma for manti and dumplings.

Composition:

  • Tomato paste – 3 tbsp. l.
  • Red hot pepper – 0.3 pods
  • Garlic – 2 cloves
  • Vegetable oil – 1 tbsp. l. 
  • Ground coriander – 0.3 tsp.
  • Ground zira (cumin) – 0.3 tsp.
  • Cilantro – 1 bunch
  • Water
  • Salt to taste.

How to do:

  1. Fry the tomato paste a little with oil, so it will lose its metallic taste.
  2. Add chopped garlic and cumin with coriander to it. It is better to grind the spices in a mortar.
  3. Chop the hot pepper (chili or jalapeño) into smaller pieces and heat with the paste and garlic mixture.
  4. After the paste has cooled, mix it with chopped cilantro, dilute with water if necessary.
  5. Salt as you like and you’re done!

You can, of course, not bother and just mix all the ingredients, but then it’s better to replace the pasta with tomato sauce. Add adjika here and get the famous Satsebeli.

Cheese sauce

This recipe is for cheese lovers and is perfect for shawarma in cheese pita bread. We can say that this is a cheese and garlic sauce for shawarma. You don’t often find this sauce in stalls.

Ingredients:

  • Sour cream – 3 tbsp. l.
  • Cream – 0.5 cups.
  • Hard cheese – 100 gr.
  • Garlic 1-2 cloves
  • Salt, pepper to taste

How to cook:

  1. Grate the cheese (which melts well) on a fine grater.
  2. Heat the cream and dissolve half the cheese in it, then cool.
  3. Grate the garlic and mix with sour cream and the other half of the cheese.
  4. When the cream has cooled, mix it and sour cream, pepper and salt if necessary.
  5. Done!

If the sauce turns out to be runny, you can add flour to it and you will get cheese Bechamel. In general, this yellow shawarma sauce is great for pasta and burgers.

Vegan or meatless

We propose to make this vegetarian sauce on the basis of cashew nut sauce, aka lenten-vegan mayonnaise.

Composition:

  • Cashews – 100 gr.
  • Mustard powder – 0.5 tsp.
  • Garlic – 1 clove
  • Lemon juice – 1 tbsp. l.
  • Sweetener – ¼ tsp.
  • Dry garlic – ¼ tsp.
  • Dill – 0.5 bunch
  • Water 
  • Salt and pepper to taste.

How to do:

  1. Grind nuts, mustard powder, garlic, dill and sakhzam in a blender.
  2. Then add lemon juice, but not all at once, periodically test for acidity.
  3. If necessary, dilute with a little water and add salt and pepper.

You can also experiment with this sauce by mixing it with tomato paste or adjika. Use it as lenten sauce for salads.
