And so, you decided to eat oysters or treat your favorite guests. But simply pouring lemon over them became uninteresting and I wanted more. The seafood oyster is not cheap and I want to emphasize its taste. What if not the sauce is capable of this. So we want to share with you recipes for the most delicious and sometimes unusual sauces for oysters.

By the way, a classic recipe for oyster sauce is made with onions and wine. White semi-dry wine that goes great with seafood, which is what we will use. The sauce will be soft and sweet and sour.

Oyster sauce composition:

  • White semi-dry wine – 500 ml
  • Lemon peel – 1 tsp.
  • Sugar – 0.5 tbsp. l.
  • Onions – 1 pc.
  • Vegetable oil – 2 tbsp. l.
  • Butter – 0.5 tbsp. l.

  • Thyme – 2 sprigs
  • Salt, pepper to taste

How to make oyster sauce:

  1. First, chop the onion and start frying it in a mixture of butter and vegetable oil until golden brown.
  2. During the frying process, add thyme and garlic crushed with a knife, let them give off their aromas and tastes to the future sauce.
  3. When the onion has become the desired color, pour in the wine and add the zest and sugar, stirring and starting to evaporate the sauce over medium heat for about 10 minutes.
  4. Then we need to strain the sauce, we only need the liquid part of it for further boiling.
  5. Continue to evaporate the sauce until it thickens, the sauce will begin to caramelize, here you can add salt and pepper.
  6. The sauce for oysters with onions is ready!

If you wish, you can add lemon juice, but in our recipe, wine will give us the necessary sourness. And the lemon zest can be replaced with orange zest.

Oyster sauce Mignonette, based on vinegar and shallots

In this recipe we will mix wine vinegar with onions, you can also use red balsamic vinegar. Use shallots, they are more tender and nobler than regular onions. As a last resort, make oyster sauce with red onion.

We will need:

  • Garlic shallot – 1 pc.
  • Wine vinegar – 50 ml
  • Olive oil – 1 tsp.
  • Sugar – 0.5 h. l.
  • Salt, ground white pepper to taste

How to make oyster sauce:

  1. First, chop the onion and sprinkle it with sugar, you can add a little salt.
  2. Stir, the onion should give juice and pour in the oil and wine, mix again.
  3. Add a little pepper and the oyster sauce is ready!

Essentially, these are pickled onions, which we love so much with herring. So oysters “love” onion with vinegar sourness. So the French know what to do!

Strawberry oyster sauce

This is an unusual option, it may sound unusual, but it tastes like a bomb. The sweet and sour berry is often used for sauces, so it goes great with oysters. It’s also the quickest and easiest oyster sauce you can make.

We will need:

  • Fresh strawberries – 1 cup
  • Olive oil – 1 tsp.
  • Ground black pepper to taste

How to make oyster sauce:

  1. Mash the strawberries with pepper and add butter, mix everything well.
  2. Strawberry sauce for oysters is ready!

It is advisable to mash the strawberries, you can even just mash them with your hands or a fork, but not with a blender. You can add chili flakes or a dash of Tabasco.
