We offer you a classic marinade for Peking duck. You can make this recipe at home, with your own hands. And you can bake it like usual in the oven and with the same tasty and crispy crust.
Classic marinade
In this recipe we will tell you how to marinate Peking duck at home. Don’t be intimidated by the number of ingredients, you can find them all or order them online.
As a last resort, replace it, for example, replace rice vinegar with apple cider vinegar, sesame oil with vegetable oil, but odorless. And you can prepare Hoisin sauce yourself.
Ingredients of the marinade:
- Hoisin sauce – 1 tbsp. l.
- Soy sauce – 6 tbsp. l.
- Rice vinegar – 2 tbsp. l.
- Sesame oil – 2 tbsp. l.
- Honey – 4 tbsp. l
- Ginger – 3 cm fruit
- Cloves – 3 cloves
- Garlic – 2 cloves
- Star anise – 1 star
- Ground black pepper – 1 tsp.
- Ground coriander – 0.5 tsp.
- Sol – 1 h. l.
Cooking recipe:
- Mix one spoon of oil with salt, pepper and coriander (this is a mixture for rubbing the inside of the duck).
- In a saucepan, begin to heat the oil, vinegar, soy sauce, Hoisin paste and honey until dissolved.
- As soon as the honey has dissolved, add cloves, star anise, garlic and ginger (just crush the garlic with a knife, cut the ginger into slices).
- Bring the mixture to bubbles and let it cool, at which time it will be enriched with the aromas of all the ingredients.
- Marinade for Peking duck is ready!
Now you know how to marinate Peking duck for baking in the oven; of course, the recipe is adapted for you and me. All you have to do is grate the duck from the inside and pack it along with the marinade in a baking bag.
It is also advisable to leave it for at least 4 hours, and preferably overnight. Adjust the salt and amount of soy sauce to your liking; you can also spice up the marinade with chili pepper.
