Today we have 7 recipes for marinades with orange juice with the addition of interesting ingredients. What you need for the New Year if you decide to bake a chicken in the oven or grill it.

Marinade for chicken for baking in the oven

Orange juice chicken marinade is great for pan-fried or baked chicken. This will be the first and simplest marinade recipe.

For the marinade we will need:

  • Orange – 1 pc. (preferably large).;
  • Garlic – 3 cloves;
  • Rosemary – 1 sprig;
  • Olive oil – 2 tbsp. l.;
  • Salt and pepper to taste.

Marinade recipe:

  1. Squeeze the juice from the orange, grate the garlic or squeeze through a garlic press.
  2. Add oil, orange juice and rosemary leaves to the garlic, stir.
  3. The chicken needs to be cut along the breast, flattened and rubbed with salt and pepper, this will be the dry part of the marinade.
  4. Then coat with the liquid part of the marinade.
  5. Marinate the chicken for at least 1 hour (longer is better). Bake at 180°C for about 40 minutes along with orange slices.

Classic orange marinade with rosemary is often used in preparing chicken or pork dishes. Also suitable for cooking kebabs, steaks, chops and stews.

For Chinese kebabs

Chicken skewers in orange marinade

Orange chicken marinade is often used when preparing kebabs. Chinese skewers have an unusual piquant taste thanks to the citrus marinade. The proportions for the marinade are given for 700-1000 grams of chicken fillet.

Chinese marinade contains:

  • Orange – 1 pc.;
  • Soy sauce – 5 tbsp. l.;
  • Garlic – 2 cloves;
  • Vegetable oil – 1 tbsp. l.
  • Sol – 0.5 h. l.;
  • Ground black pepper – 1 tsp.

How to make the marinade:

  1. Squeeze the orange and extract the juice, grate the garlic.
  2. In a bowl, mix soy sauce, oil, orange juice, ground black pepper, salt and garlic.
  3. Wash the chicken, dry it with a paper towel and cut into small cubes, but not less than 2 centimeters.
  4. Marinate the fillet pieces and press them together, repeat the procedure after another 10 minutes.
  5. Just 20 minutes is enough for marinating.

All you have to do is put the chicken on skewers (pre-soaked in water) and put it on the grill or bake in the oven. Bake on coals for no more than five minutes on each side.

If you cook in the oven, it is better to put them on a wire rack and place a baking sheet underneath. Bake at 200°C for 20-25 minutes. It is advisable to turn on the convection mode. Serve kebabs with matsoni sauce.

For the wings

Wings in orange marinade

An orange marinade for wings may seem unusual, but it adds a lot of flavor. Especially if you cook the wings on the grill or barbecue.


  • Juice of one orange;
  • Garlic – 3 cloves;
  • Paprika – 1 tbsp. L.;
  • Table mustard – 1 tsp;
  • Vegetable oil – 1 tbsp. l.;
  • Salt and pepper to taste.

How to prepare the marinade:

  1. Mix squeezed orange juice with chopped garlic, salt, pepper, paprika and mustard and oil.
  2. Make cuts on the wings and dip them in the prepared marinade, leave for at least 30 minutes.
  3. Fry in hot oil until golden brown, over medium heat for about 20 minutes.

Cheese sauce with jalapeno is perfect for such wings, which is also good for French fries. Use it as a side dish and it will be just a bomb!


Honey-orange marinade

Honey will add additional sweetness to the marinade. In addition, adding it will only make the crust crispier.

Ingredients for a chicken weighing approximately 2 kg:

  • Orange – 2 pcs.;
  • Honey – 2 tbsp. l.;
  • Khmeli-suneli – 1 h. l.;
  • Garlic – 4 cloves;
  • Vegetable oil – 2 tbsp. l.
  • Salt, pepper to taste


  1. Press the garlic through a press and mix with oil and spices.
  2. Dissolve honey in orange juice, add salt (about 1 tsp)
  3. We combine everything into a single mass and rub the chicken with it on both sides.
  4. It is advisable to leave it for at least 2 hours.

By the way, suneli hops in this recipe can be replaced with utsho suneli, this will give the meat a nutty flavor and a Caucasian accent. Especially if you serve adjika-based sauce as a sauce.

With orange and soy sauce

Marinade with orange and soy sauce

In this recipe, the proportions are also given for 2 kg of chicken meat, legs, wings or breast. Soy-orange marinade can also be served as a sauce if thickened with starch.


  • Orange – 2 pcs.;
  • Soy sauce – 70 ml;
  • Garlic – 4 cloves;
  • Vegetable oil – 2 tbsp. l.;
  • Table mustard – 2 tsp;
  • Cayenne pepper – 1/4 tsp;
  • Salt and pepper to taste.

Cooking process:

  1. Grate the garlic on a fine grater and squeeze the juice from the orange.
  2. Mix all the ingredients and soak the chicken in this marinade for at least 2 hours.
  3. Then bake the whole carcass at 180 °C for about forty minutes.

The recipe applies to a whole chicken and when baking it is advisable to cut it along the breast. We also recommend baking it skin side up, but be careful not to burn it.

For variety, you can replace regular mustard with Dijon. But you will need to take 2 tablespoons of it, because it is not so spicy.

With orange and lemon

Oranges and lemons

The orange-lemon marinade has its own twist. After all, sweet and sour marinade for chicken is a classic! If desired, lemon can be replaced with lime.

Marinade ingredients:

  • Orange – 1 pc.;
  • Lemon – 1 pc.;
  • Honey – 2 tbsp. L.;
  • Vegetable oil – 2 tbsp. l.;
  • Curry – 1 h. l.;
  • Sol – 1 h. l.
  • Pepper to taste

Step by step recipe:

  1. Squeeze juice from orange and lemon.
  2. Dilute the honey with juice; if it is very hard, melt it in the microwave first.
  3. Add oil, curry, salt and pepper, stir and grate the chicken meat.

Do not add too much curry, it may be bitter. This seasoning is needed here more for color, although it will also give off its taste. This recipe is also suitable as marinade for duck.

Orange-ginger for chicken legs

Orange-ginger for chicken legs

Marinade with orange and ginger can be used to marinate not only chicken, but also meat, fish, and vegetables. In general ginger sauce often accompanies meat dishes.


  • Orange – 1 pc.;
  • Ginger – 5 cm;
  • Soy sauce – 50 ml;
  • Honey – 2 tbsp. L.;
  • Vegetable oil – 2 tbsp. l.;
  • Garlic – 3 cloves;
  • Ground coriander – 0.5 tsp;
  • Sol – 1 h. l.

How to make the marinade:

  1. Squeeze the orange. Melt honey in a water bath. Chop the garlic as finely as possible. Grind the coriander.
  2. Grate the ginger directly with the skin on a fine grater, then squeeze out the juice and discard the cake.
  3. Then mix all the marinade ingredients and spread it on the chicken.
  4. The marinating time depends on the size of the legs, but should be at least 40 minutes.

If you have separate legs or thighs, you can reduce the time to half an hour, but it is always better to leave it in the refrigerator overnight. Especially if you have a whole chicken.
