This composition is approximately enough for a chicken weighing 1-1.5 kg, it is also suitable for legs. Balsamic vinegar for marinating chicken is as good as usual and even better. It is more aromatic and not as aggressive.

Do not marinate with balsamic cream, it is better to use it as a sauce.

As for the marinade for chicken kebab, replace fresh garlic with granulated one. Fresh ones will burn on coals. Chicken in balsamic vinegar and soy sauce is juicy and soft.

For oriental chicken breast fillet

As you understand, chicken marinated with balsamic vinegar is delicious, and breast with balsamic vinegar turns out just as good. You can soak it according to the recipe above, but let’s make a Chinese-style marinade.

Composition:

  • Balsamic vinegar – 30 ml.
  • I am willow – 50 ml.
  • Sesame oil – 1 tbsp. l.
  • Garlic – 2 cloves
  • Chili pepper – 0.5 pods
  • Ground ginger – 1 tbsp. l.
  • Ground coriander – 0.5 tsp.
  • Honey – 1 tbsp. l.

How to marinate chicken fillet in balsamic vinegar:

  1. Grind the garlic or make garlic puree.
  2. Chop the pepper into small cubes (if you like it spicier, leave the seeds).
  3. Mix all the ingredients until smooth and marinate the fillet in it.

For this Chinese chicken, it is better to cut the breast into cubes no thicker than 2 centimeters. Fry over high heat for about a minute on each side.

When serving, you can pour teriyaki sauce and sprinkle with sesame seeds. You can also add teriyaki to the marinade. Instead of ground ginger, take fresh ginger, grate it and squeeze the resulting juice into the marinade.

For the wings

And of course, we couldn’t help but give you the recipe for the marinade for the wings. After all, wings with balsamic vinegar are a different story!

Composition per 1 kg of wings:

  • Balsamic vinegar – 30 ml.
  • Vegetableoil – 2 tbsp. l.
  • Worcester sauce – 2 tbsp. l.
  • Garlic – 2 cloves
  • Cayenne pepper – 0.5 tsp.
  • Honey – 1 tbsp. l.
  • Salt, pepper to taste

How to prepare the marinade:

  1. As always, chop the garlic and melt the honey.
  2. Mix with the rest of the marinade ingredients and add salt.
  3. Add wings and marinate for at least 1 hour.

Worcestershire sauce, can be replaced with soy sauce or fish sauce, try all options. And you will understand what chicken wings in balsamic vinegar are.

For pork and steak skewers

  2. Vegetable oil – 2 tbsp. l.
  3. Mustard – 1 tsp.
  4. Onions – 2 large heads
  5. Basil – 1 bunch
  6. Salt, spices to taste

Recipe:

  1. We chop the onion at random and put it in a blender, then squeeze the juice out of it.
  2. Add oil, mustard, your favorite spices and chopped basil to the onion juice.
  3. Salt, pepper, mix with meat and put in the refrigerator for at least 2 hours.

If you don’t want to bother with a blender, then cut the onion into half rings and combine it with salt. You need to get the juice out of it.

Take only leaves from basil; stems are not needed. Or instead of fresh, add a teaspoon of dried.

Such meat with the addition of balsamic vinegar can be cooked in the oven and fried in a frying pan. Any meat will suit this marinade. The main thing is to prepare a delicious sauce for the kebab!

For turkey

This marinade is suitable for both turkey fillet and drumsticks. Of course, the drumstick will need to marinate longer. Turkey in balsamic vinegar is juicy and flavorful.

Marinade composition per 1 kg:

  • Balsamic vinegar – 30 ml.
  • I am willow – 70 ml.
  • Vegetable oil – 2 tbsp. l.
  • Garlic – 3 cloves
  • Paprika – 1 tbsp. l.
  • Oregano – 1 tsp. l.
  • Thyme – 1 tsp
  • Salt, pepper to taste

Cooking process:

  1. Mix the spices with the oil and let them open.
  2. Press the garlic through a garlic press and add to the spices.
  3. Add balsamic and soy sauce, stir and add salt if necessary.

This marinade can be prepared with olive oil, but oil is a must in any marinade!

For beef for ribs

Beef ribs with balsamic vinegar

Marinade with balsamic vinegar for beef meat according to our recipe will soften it and make it juicier. We will look at a recipe for baking in a sleeve in fairly large pieces. It is better to take beef ribs with fat.

Composition per 1 kg of meat:
  • Balsamic vinegar – 3 tbsp. l.
  • Hoisin sauce – 2 tbsp. l.
  • Vegetable oil – 2 tbsp. l
  • Garlic – 3 cloves
  • Onion – 1 head
  • Mustard – 1 tsp.
  • Bay leaf – 1 pc. 
  • Ground coriander – 1/2 tsp.
  • Hot pepper – a pinch
  • Salt to taste  

Cooking method:

  1. Cut the onion into half rings, do not chop it too much, otherwise it will dissolve during baking.
  2. Garlic can be chopped in any way; its taste is more needed for the sauce that results from baking.
  3. Mix the remaining ingredients except bay leaf and add onion and garlic to them.
  4. Rub the resulting marinade over the beef, put everything in a sleeve and place a bay leaf there.
  5. Place in the refrigerator overnight, then bake at 180° for at least an hour and a half.

Beef should be marinated in balsamic vinegar for at least five hours. If you want to fry such meat in a frying pan, it is better to cut it into strips, like beef stroganoff. In this case, the meat can be marinated for about an hour.

But we still recommend cooking ribs with balsamic vinegar; this marinade is perfect for ribs.

For the marinade for shish kebab, it is better to make onion juice and replace the garlic with dried garlic, as we wrote above. Hoisin sauce can be replaced with soy sauce.

For the duck

Not everyone loves the way duck meat smells and it can often be tough and dry. This is where balsamic comes to the rescue, along with the rest of the ingredients.

For 1.5 kg of duck we will need:

  • Balsamic vinegar – 30 ml.
  • I am willow – 200 ml.
  • Dry white wine – 100 ml.
  • Honey – 1 tbsp. l.
  • Mustard – 1 tsp.
  • Vegetable oil – 2 tbsp. l.
  • Garlic – 3 cloves
  • Ginger powder – 1.5 tbsp. l.
  • Ground black pepper – 0.5 tsp.
  • Salt – 1 tbsp. l.

How to make the marinade:

  1. As usual, grate the garlic and mix it with pepper and ginger with butter.
  2. Mix liquid honey with mustard with oil and spices.
  3. Add vinegar, soy and wine, mix and rub the duck with marinade.

It is better to marinate the duck in balsamic vinegar for at least five hours, after pricking the duck with a toothpick. And preferably all this in a baking bag, since the marinade is liquid.

Bake it in it. One and a half kilograms of duck are baked for about two hours. This balsamic vinegar marinade is also suitable for quail and quail.

For vegetables

Marinade for vegetables with balsamic vinegar is not much different from marinade for meat. Vegetables, in principle, do not need acid to soften, but balsamic is amazing for adding flavor.

We will need:

  • Balsamic vinegar – 50 ml.
  • Olive oil – 3 tbsp. l.
  • Garlic – 3 cloves
  • Basil – 1 h. l.
  • Oregano – 1 tsp. l.
  • Thyme – 1 h. l.
  • Salt, pepper to taste

Recipe:

  1. Chop the garlic finely.
  2. Mix it and spices with olive oil.
  3. Add balsamic vinegar and mix everything again.

All that remains is to marinate the vegetables in it and put it in the oven for 15-20 minutes, at 200-200 degrees. Grilled vegetables also turn out very tasty with this marinade.

Vegetables on the grill always taste better than in the oven, and with such a marinade it’s just the bomb!

For champignons

Marinade for champignons with balsamic vinegar is made for those who like sourness. Mushrooms with balsamic vinegar are a complete side dish for meat or an independent dish.

Composition of marinade for 0.5 kg of champignons:

  • Balsamic vinegar – 30 ml.
  • Soy sauce – 30 ml.
  • Vegetable oil – 2 tbsp. l.
  • Garlic – 3 cloves
  • Paprika – 1 tbsp. l.
  • Salt, pepper to taste

Marinade recipe:

  1. It is better to grate the garlic or use a garlic press.
  2. Then mix it with the rest of the ingredients and coat the champignons thoroughly with it.
  3. To marinate, it is better to leave them for at least 20 minutes.

Be sure to try cooking champignons in balsamic vinegar. And of course it’s better to cook them over coals. Once cooked, mix them with any of your favorite greens. Dill, parsley and cilantro are excellent.

And of course, we couldn’t help but tell you how to marinate onions in balsamic vinegar. After all, pickled onions and herring are our everything. Let’s start with pickled onions with herbs.

Red onion with dill for herring

It will be tastier to make such a marinade for red or white onions; these are salad varieties and are less bitter. It is better to first pour boiling water over ordinary onions and leave for 5 minutes.

Ingredients for 3 onions:

  • Balsamic vinegar – 3 tbsp. l.
  • Vegetable oil (fragrant) – 2 tbsp. l.
  • Dill – 0.5 bunch
  • Salt, sugar, pepper to taste

How to pickle onions:

  1. Chop the onion into half rings or whole rings.
  2. Chop the dill into smaller pieces and add to the onion.
  3. Salt, pepper, add sugar and balsamic, mix.
  4. Pour in the oil, mix everything again and leave for 20 minutes.

You can take any greens, but dill is best suited to herring. By the way, if you remove the greens completely, then here are the pickled onions for the salad.

And if you remove the oil, you will get delicious onions for barbecue or lula kebab. You can also use pickled red onions with dill for burgers. But then make the rings larger.

Onions with Dijon mustard

This is a more piquant version of the onion marinade. But at the same time Dijon mustard in grains gives an interesting taste to the onions and bursts wonderfully in the mouth.

For 3 onions we will need:

  • Balsamic vinegar – 2 tbsp. l.
  • French mustard – 1 tbsp. l.
  • Vegetable oil (unflavored) – 2 tbsp. l.
  • Salt and pepper to taste.

Marinade recipe:

  1. Mix the chopped onion with the rest of the ingredients.
  2. Stir and leave for about two hours, or preferably overnight.

This onion is great for hamburgers, hot dogs and shawarma. You can use it to make a salad with pickles and potatoes. Or use it as sauce for boiled pork or boiled tongue.
