White wine marinade
Chicken marinade with white wine is the most popular of all alcoholic recipes. Processing this alcohol makes the meat even more tender. You can use any variety – from sweet to dry.
If you use dessert wine, the wine marinade for chicken in the oven will turn out sweetish – this is a good alternative to glazing with honey.
Composition:
- white wine – 200 ml;
- onions – 1 pc.;
- lemon – 1 pc.;
- garlic – 3 cloves;
- olive oil – 60 ml;
- salt;
- ground black pepper;
- ground coriander.
How to do:
- Finely chop the onion and garlic (you can use a press for the latter).
- Peel the lemon and chop it finely.
- Rub the chicken with a mixture of salt, ground coriander and pepper.
- Squeeze the juice from a whole lemon.
- Mix wine, juice and olive oil in a separate container.
- Pour the resulting mixture over the chicken, already rubbed with spices. Move the pieces so that the marinade gets between them.
- Place the meat in the refrigerator for 2 hours.
This wine marinade for chicken in the oven is quite neutral. It does not have its own distinct taste, but it makes the taste of chicken brighter and more interesting.
With red wine
Marinade for chicken with red wine is an excellent alternative to white. The choice of drink has virtually no effect on the taste of the dish, but the chicken turns pinkish and looks appetizing.
Composition:
- red wine – 150 ml;
- onions – 3 pcs.;
- ketchup – 6 tbsp. L.;
- salt;
- ground black pepper (or other spices to taste).
How to cook:
- Cut the onion into rings.
- Mix it with the chicken in a large bowl.
- Add salt and spices. Mix again.
- In a separate container, mix wine and ketchup until smooth.
- Pour the mixture over the meat.
- Leave for 3 hours. You can do less, but for optimal flavor intensity you will need about 3 hours.
Chicken marinated according to this recipe is usually baked with onions. It takes about 40 minutes to prepare. If you don’t like ketchup, then take Krasnodar sauce.
From champagne
Champagne marinade is best for barbecue, but you can try other methods of cooking meat.
Composition:
- champagne (ideally brut) – 200 ml;
- onions – 2 pcs.;
- salt;
- ground black pepper;
- star anise;
- basil.
Recipe:
- Cut the onion into desired pieces for easy cooking. For traditional shish kebab it is better to shred it into rings, and for barbecue – into half rings.
- Mix onions with chicken.
- Add salt and all spices. Mix well so that the spices are distributed as evenly as possible.
- Fill everything with champagne.
- Leave the meat for 20 minutes. Then transfer the pieces and leave for another 20-30 minutes.
Due to the fact that the drink is carbonated, marinating takes very little time. If there is nowhere to rush, then the chicken can be left in champagne for 2 hours.
But if you cook the kebab in 40 minutes, the taste will also be excellent.
Chicken legs in wine sauce
Another interesting marinade for chicken in wine is using bell pepper. You can take absolutely any drink – according to personal preference.
The finished chicken will have a slight taste of wine, so you should choose the variety that you like best.
Composition:
- red wine – 200 ml;
- water – 200 ml;
- onions – 1 pc.;
- bell pepper (preferably red) – 1 pc.;
- tomato paste – 4 tbsp. L.;
- salt;
- pepper mixture.
How to do:
- Rub the legs with salt and pepper. You can also use just black pepper, but a mixture of several types is better suited to gray meat (pink is highly recommended).
- Place on a wide baking sheet. It is advisable that there is a little space between adjacent legs – this way they will marinate better.
- Cut the bell pepper into small slices.
- Place pepper on top of chicken.
- Finely chop the onion.
- Sprinkle the legs with onions on top (no need to stir).
- Dissolve tomato paste in water until smooth.
- Mix pasta with wine.
- Pour the resulting mixture over the chicken.
The legs can be left for a short time to marinate. But this is not necessary – the dish will bake for about 1.5 hours, and during this time the chicken will have time to be saturated with the filling.
Marinade for wings with wine and honey
Honey-wine chicken marinade is ideal for baked wings. You can use it for other parts of the bird, but usually cooks associate honey with the wings.
And for good reason – sweet marinades are best suited for this part of the chicken.
Composition:
- white wine (preferably semi-sweet) – 100 ml;
- water – 200 ml;
- honey – 2 tbsp. L.;
- olive oil – 2 tbsp. l.;
- ground paprika – 1 tsp.
- salt
Marinade recipe:
- Dry the washed wings thoroughly. Excess moisture will dilute the marinade and make it less rich in taste.
- Mix honey and paprika.
- Brush the mixture on all sides of the wings.
- Leave for 40 minutes.
- Pour olive oil into a thick-bottomed frying pan. Warm it up thoroughly.
- Lay out the wings. Add salt. To make the wings crispy, you need to add salt now, and not during marinating.
- Fry until golden brown.
- Mix wine with water.
- Pour the mixture over the meat in the frying pan.
- Simmer until all the liquid has evaporated. During the process, turn over at least 2 times.
These wings are often eaten as a beer snack. But it can also be used as a main dish with a side dish of potatoes or other vegetables.
Wine-garlic marinade
Wine marinade can be not only tender, but also quite spicy. One such option is a garlic marinade, which is good for absolutely any part of the chicken.
Composition:
- red wine – 200 ml;
- garlic – 3 cloves;
- soy sauce – 50 ml;
- Worcestershire sauce – 2 tbsp. L.;
- olive oil – 30 ml;
- Italian herbs (basil, rosemary and oregano are desirable);
- seasoning for meat (preferably spicy).
How to marinate:
- Combine wine, Worcestershire and soy sauces, olive oil. Stir until smooth.
- Pour mixture over chicken.
- Grind the garlic with a press.
- Mix chopped garlic with spices.
- Add to the marinating chicken and mix thoroughly.
- Place in the refrigerator for 3 hours. It is worth turning the chicken every 30-40 minutes so that it is better saturated with the marinade.
It is better to cook this chicken in the oven, but you can also cook it in a frying pan. There is no need to salt the meat before cooking, since the meat seasoning already includes salt. But sometimes manufacturers don’t add it, so it’s worth looking at the composition on the package.
Beer chicken marinade
Chicken marinade with beer is an excellent alternative to wine pouring. The only difficulty is that when baking a whole chicken, beer causes the top of the carcass to cook much faster than the inside. Therefore, it is better to bake individual parts (ideally legs or wings).
Composition:
- light beer – 300 ml;
- onions – 2 pcs.;
- garlic – 3 cloves;
- celery root – 1 pc.;
- rosemary (preferably fresh) – 2 sprigs;
- salt
Recipe:
- Finely chop the onion and celery. Pass the garlic through a crusher.
- Mix all the vegetables.
- Salt the chicken. Place in a baking dish.
- Sprinkle the vegetable mixture on top of the meat and put rosemary.
- Pour beer generously and start cooking immediately.
In addition to the oven, a marinade in beer is good for grilling. When cooked over an open fire, the intoxicating drink gives an unusual and quite bright taste. In this case, the chicken should be marinated for 1 hour before cooking.
