What’s a New Year’s table without a goose? That’s right – NO-ONE! It’s not for nothing that many people wonder how to marinate a whole goose for the oven? The Christmas goose will turn out juicy and tasty if it is marinated correctly. There are many marinades, here are the most delicious marinades for goose whole and in pieces.

With soy sauce

 

Soy sauce, like onion juice, softens meat quite well. This is why this marinade is suitable for wild goose, because it has practically no fat. And after soaking in soy sauce and spices, the goose will become juicy and soft.

For one kilogram of goose we will need:

  • Soy sauce – 100 ml
  • Garlic – 4 cloves
  • Vegetable oil – 1 tbsp. l.
  • Ground black pepper – 1 pinch
  • Mustard – 1 tsp.
  • Star anise (star anise) – 1 pc.
  • Sol – 1/3 h. l.

Recipe:

  1. Grind the garlic and butter in a blender, or grate it.
  2. Grind star anise in a mortar or other method.
  3. Mix with soy sauce and spices with salt.
  4. Place the goose and marinade in a baking sleeve and leave overnight.
  5. It is advisable to turn the goose several times right in the sleeve so that the marinade better saturates it.

For better penetration of the marinade into the carcass, pierce it with a toothpick in several places!

It is better to marinate directly in the sleeve, although this is not necessary, you can do it in any container. But in this case, you need to increase the amount of marinade so that it covers the goose completely.

Marinate in a sleeve, then it is more convenient to bake in it. Better yet, place the goose and marinade in a bag and vacuum seal. In any case, you need to leave the bird to marinate overnight in the refrigerator.

Soy-honey marinade with ginger

 

This marinade is suitable for both whole goose and pieces. Also suitable for wild goose. As we have already written, goose in soy sauce cannot be tasty.

We will need:

  • Soy sauce – 100 ml
  • Honey – 100 g.
  • Ground ginger – 2 tbsp. l. 
  • Garlic – 2-3 cloves.
  • Vegetable oil – 1 tbsp. l.
  • Ground black pepper – 1 pinch.
  • Sol – 1/3 h. l.

Cooking method:

  1. Honey should be liquid, solid honey should be melted and mixed with soy sauce.
  2. Grate the garlic or press it through a garlic press.
  3. You can also take fresh ginger, but then you need to grate it on a fine grater and squeeze out the juice.
  4. Add ginger, pepper, garlic, oil and salt to soy sauce with honey.
  5. Mix thoroughly and let it brew for about five minutes so that all the ingredients release their flavors and aromas to the sauce.
  6. Rub the goose thoroughly with the resulting mixture and leave it in the refrigerator overnight.

The oil will help release the spices, and the honey will give the goose a sweetish taste and a good crust. In the same way you can marinate a duck for roasting.

Lingonberry marinade

The marinade for goose with lingonberries is very simple. But it requires a blender; if you don’t have one, then rub the lingonberries through a sieve.

We will need:

  • Lingonberries – 2 cups
  • Apple cider vinegar – 1/3 cup
  • Garlic – 2-3 cloves
  • Water – 1/2 cup
  • Sugar – 1/2 cup
  • Dry mustard – 1 tsp.
  • Salt – 1 tbsp. l.

Recipe for lingonberry marinade for goose:

  1. Puree the lingonberries using a blender or masher.
  2. Grind the garlic in any way so that it produces juice.
  3. Mix all the ingredients and beat everything with a blender again.
  4. Rub the goose thoroughly and leave to marinate in the refrigerator for 4-8 hours.

You can first boil this whole mixture and then puree it with a blender. It will not be superfluous to rub it through a sieve; this will help get rid of any cake.

We all know that the goose loves sweets for the New Year, be it honey, prunes, apples. Therefore, wine marinade for goose is amazing.

Goose marinated in wine turns out soft and juicy, with interesting fruity notes. It is better to take dry white wine, it is most suitable for goose meat.

We will need:

  • Wine (white dry) – 1 bottle
  • Garlic – 5-6 cloves
  • Lemon – 1 piece
  • Water – 1-2 glasses
  • Thyme – 1 tbsp. l.
  • Salt – 1-2 tbsp. l.
  • Sugar – 1 tbsp. l.
  • Ground pepper – to taste.

How to marinate:

  1. Wash the garlic; it is not necessary to peel it; you can simply crush each clove with a knife.
  2. Mix wine with water and juice of a whole lemon.
  3. Add the rest of the spices and stir until the salt and sugar dissolve.
  4. Pour over the goose carcass, completely covering it with marinade.
  5. Leave to marinate overnight or for 8-10 hours.

  • Sol – 1 h. l.

Marinating process:

  1. Three garlic on a fine grater or squeeze through a press.
  2. Mix honey with soy sauce and butter.
  3. Now add the rest of the ingredients and mix everything thoroughly again.
  4. Next, as usual, rub the goose carcass with marinade and let it marinate for several hours.

You may not need any salt at all, it all depends on how salty the soy sauce is.

Honey-mustard marinade is one of the classic recipes for marinating goose. It can be used on any bird.

Kefir or yogurt

Kefir with its acidic environment will perfectly soften goose meat and give it juiciness. It will also help penetrate the flavors and aromas that are included in the marinade.

We will need:

  • Kefir/yogurt – 0.5 liters
  • Ground paprika – 1 tbsp. l.
  • Garlic – 5 cloves
  • Vegetable oil – 2 tbsp. l.
  • Lemon peel – 2 tbsp. l.
  • Salt – 1 tbsp. l.
  • Spices to taste

Marinade preparation process:

  1. As usual, chop the garlic in any way, it is better that it gives juice.
  2. Mix spices and garlic with oil; paprika can be replaced with turmeric, then the color of the goose will be a pleasant yellow hue.
  3. Add everything to the kefir and the zest too.
  4. We marinate the goose in a bag or baking bag and cook it in it.
  5. Don’t forget to turn the goose over while it is marinating.

  • Pomegranate juice – 200 ml

  • Vegetable oil – 2 tbsp. l.
  • Salt, pepper – 1 tsp.

How to marinate:

  1. Mix the spices with oil and give them a couple of minutes to open.
  2. Add pomegranate juice and mix well.

If you follow our recipe, the goose in pomegranate marinade will delight you with its taste. But if you are afraid of drying out the meat, then it is better to take the whole pomegranate and extract the juice from it. After all, store-bought sauce can be highly concentrated.

If you don’t have a juicer, just peel the pomegranate and put the seeds in a strong bag. Then roll with a rolling pin several times and get juice.

Orange marinade

 

This is another type of sweet marinade for goose. There will be a very aromatic and tasty dish for the New Year. Goose marinated in orange and soy sauce will become your favorite holiday dish.

We will need:

  • Oranges – 2 pcs.
  • Soy sauce – 3 tbsp. l.
  • Bay leaf – 1-2 pcs.
  • Garlic – 6 cloves
  • Honey – 2 tbsp. l.
  • Unscented sunflower oil – 3 tbsp. l.
  • Allspice – 0.5 tsp.
  • Cloves – 3-5 pcs.
  • Sol — 1.5 h. l.

Cooking process:

  1. Wash the oranges and remove the zest from one of them.
  2. We peel both oranges and cut them into pieces convenient for dipping into a blender.
  3. Grind the garlic, cloves, allspice and bay leaf in any way.
  4. Mix honey, soy sauce, oil.
  5. Place everything in a blender bowl and start blending until a homogeneous mass is formed.
  6. We smear our goose, after making punctures in the skin with a toothpick or knife.
  7. Let it brew for 4-8 hours, or preferably overnight as usual.

As you can see, the recipe for goose in orange marinade is very simple. It will take time just to saturate the goose with aromas. But without this you can’t go anywhere.

Another way to marinate a goose before baking. This marinade will appeal to lovers of hot and spicy dishes.

We will need:

  • Adjika (preferably homemade or store-bought, but proven) – 4 tbsp. l.
  • Unscented vegetable oil – 2 tbsp. l.
  • Apple vinegar or balsamic – 4 tbsp. l.
  • Ground paprika – 1 tbsp. l.
  • Salt to taste.

How to prepare marinade with adjika for goose

Be careful with salt, because adjika already contains it!

  1. Mix all the ingredients in a container and let our marinade brew for a little while.
  2. At this time, pierce the goose with something sharp to penetrate the marinade under the skin.
  3. Now that all the spices and flavors have been revealed, let’s rub our goose.
  4. We wait several hours or overnight.

The marinade couldn’t be simpler, so to speak in a hurry! By the way, you can prepare adjika from plum, which will complement the fruity aroma of the goose.
