Orange marinade
This is a classic marinade for duck before baking. This marinade is suitable for duck with oranges, as well as the most popular duck with apples. It is very convenient for cooking in a sleeve, since it is immediately marinated in it and then baked in it.
It is suitable for duck in pieces and whole. The orange-soy marinade will soften the duck meat and infuse it with flavor.
We will need:
- Orange – 2 pcs.
- Garlic – 3 cloves
- Soy sauce – 1 tbsp. l.
- Vegetable oil – 1-2 tbsp. l.
- Ground black pepper – 1/2 tsp.
- Thyme – 1-2 tsp
- Salt to taste
How to marinate:
- Wash the oranges well and grate the zest from one orange.
- Cut both oranges and squeeze out the juice.
- Finely chop the garlic or press it through a garlic press; a grater will also work.
- Mix all the ingredients and let them brew and open for about 10-15 minutes.
- We pierce the skin of the duck and rub it thoroughly with marinade.
- Place the duck with the remaining marinade in the sleeve for several hours, or better yet, overnight.
It is advisable to turn the duck in the sleeve several times for better soaking!

Composition:
- Honey – 2 tbsp. l.
- Soy sauce – 1/2 cup
- Mustard – 1 tsp.
- Lemon – 1/2
- Vegetable oil – 2 tbsp. l.
- Ground red pepper 1/2 tsp.
How to marinate:
- Dissolve honey in soy sauce; if the honey is thick, melt it slightly in the microwave or in a water bath.
- Grate the lemon zest.
- After this, mix the oil, mustard and juice from half a lemon.
- Add the zest and hot pepper, let the marinade steep for 10 minutes.
- Soy marinade with honey is ready!

With mayonnaise, mustard and garlic
This is the simplest marinade for duck whole or in pieces. And one of the most affordable. Mayonnaise already contains: vegetable oil, vinegar, citric acid, salt, mustard. Thus, we will need a minimum of ingredients.
You can’t think of a better quick option. Mayonnaise marinade is often used for various types of meat and duck is no exception. For this recipe you can prepare homemade mayonnaise.
We will need:
- Mayonnaise – 2-3 tbsp. l. with a slide.
- Mustard – 1 tsp.
- Garlic – 4 cloves.
- Vegetable oil – 1 tbsp. l.
- Salt, pepper to taste
Step by step recipe:
- Grate the garlic and mix with mayonnaise, mustard and butter.
- Salt, pepper and it’s done!
As we said, this is the simplest marinade from the “guests on the doorstep” series! All that remains is to grate and bake the duck, but it is better to let it marinate for at least a couple of hours. But of course, it’s better to leave the duck to marinate overnight, right in the sleeve.
You can safely add here rosemary, thyme or your other favorite spices. A tablespoon of paprika will also give the duck a beautiful color.
You can also prepare a marinade with French mustard instead of table mustard. Its balls will crunch interestingly when you taste the dish.
Wine marinade
Marinade “Drunken duck” or else it is called in French. After all, as you know, the French cannot live without wine. And this is just what you need for the New Year!
It is better to marinate duck with red wine. This way the color of the crust will be more beautiful and the meat will have an interesting fruity flavor. You can also marinate with white wine. Choose a wine with fruity and citrus notes.
We will need:
- Red wine (semi-sweet) – 1 bottle.
- Water – 1 glass
- Ground pink pepper – 1 tsp.
- Cinnamon – 2 sticks
- Star anise – 2 stars
- Cloves – 5 cloves
- Salt – 1 tbsp. l.
Marinating process:
- Mix pepper and salt, then rub the duck with this mixture.
- Mix the wine with water and spices in a saucepan, put on the fire and bring to a boil.
- Then turn it off and let it cool, then immerse the duck in it and leave it overnight.
The most convenient way to make marinade is in your sleeve. Since then there is no need to transfer the duck and the marinade itself will better fit into the carcass. You can add orange slices, honey, sugar to it if your wine is dry.
Keep in mind that although alcohol evaporates at 70 degrees, give this meat to children with caution. And be sure to try the wine marinade yourself. You can experiment with wine, take sweet, semi-sweet or dry.
Mustard-spicy marinade
Another such marinade can be called ginger-honey. After all, honey and mustard are, as you understand, almost irreplaceable ingredients for pickling.
Mustard adds piquancy, and honey will give a beautiful and crispy crust. And the presence of spices will give the duck a delicious aroma.
We will need:
- Honey – 2 tbsp. l.
- Russian mustard – 1 tbsp. l.
- Ground ginger – 2 tsp.
- Garlic – 4 cloves
- Soy sauce – 2 tbsp. l.
- Vegetable oil – 2 tbsp. l.
- Ground pepper mixture – 1/2 tsp.
- Ground coriander – 1/2 tsp.
- Zira (she will use cumin) – 1/2 h. l.
How to make the marinade:
- Mix honey and mustard with soy sauce.
- Grind the garlic in any way, cumin can be crushed in a mortar or simply rubbed with your fingers.
- Mix a mixture of peppers, garlic, coriander and cumin with vegetable oil; the oil will release the spices.
- We also add ginger there; if you have fresh ginger, then a 3-4 cm piece of it, grated on a fine grater and squeezed, is enough.
- Mix all the ingredients and let the marinade steep for 10 minutes.
- Honey marinade with mustard and spices is ready.
It will be better if the duck in the ginger-soy marinade remains in the refrigerator overnight. Teriyake or Hoisin sauce goes well here. They are the ones included in the marinade for Peking duck, but that’s a completely different story.
