Buffalo sauce

Buffalo sauce is an essential part of buffalo or buffalo wings, depending on pronunciation. The name comes from the city of the same name, where such wings were invented.

The dish conquered all of America, and the Anchor bar, where it appeared, became a landmark of the city. We want to give you a recipe for Buffalo sauce, and you can use it not only on wings.

Classic recipe for wings

Wings in Buffalo sauce

Classic Buffalo Sauce includes: chili sauce, vinegar, cayenne pepper and butter. We want to slightly enhance the taste of the original sauce.

But at the same time, it will not lose its signature taste, but will only be saturated and enriched with other ingredients. In addition, fresh cayenne pepper is difficult to find.

Composition:

  • Chili pepper – 1 pod
  • Onions – 1 pc.
  • Garlic – 2 pcs.
  • Butter – 2 tbsp. l.
  • Mashed tomatoes – 200 ml (1 cup)
  • Worcester sauce – 2 tbsp. l.
  • White wine vinegar – 1.5 tbsp. l.
  • Salt, sugar to taste

How to prepare the sauce:

  1. First, chop the onion into small cubes and place it in a saucepan to fry in butter.
  2. Fry over medium heat until caramel color.
  3. Then we also chop the pepper and garlic and add it to the onion, and also pour in the pureed tomatoes.
  4. After 10-15 minutes, the sauce should evaporate and thicken; you can adjust it to taste.
  5. Pour in vinegar, Worcestershire sauce, add salt and, if necessary, sweeten with sugar.
  6. The sauce is ready! All that remains is to fry the wings and pour this sauce over them.

Of course, you can replace not only pepper, but also pureed tomatoes with tomato paste diluted with water. It’s better to take proven ketchup or Krasnodar sauce.

By the way Worcestershire sauce you can make it yourself or add soy sauce. Don’t rush to add a lot of salt, because these sauces are salty. And add sugar at the end, it all depends on the acidity of your tomatoes.
