Summer has come and it’s time to share with you the recipe for Krasnodar sauce. And we will give you not just one, but five recipes that you can cook with your own hands at home and prepare for the winter.

Classic recipe according to GOST, as in the USSR

First of all, we decided to give you a recipe for making Krasnodar sauce, as it was prepared in the Soviet Union. Then there was GOST and the quality remained at the same level for years. This is exactly how our grandmothers and mothers prepared the sauce for the winter, in the Soviet way.

Of course, the technology for producing factory-made sauce differs from cooking it at home, but this does not affect the taste. The main thing is to take ripe, fleshy tomatoes and sweet apples, although you can always adjust the salt and sugar.

According to GOST, the composition included apple and tomato puree, which was not always available. Therefore, at home for the winter it was prepared with apples and tomatoes and, of course, with aromatic spices. And now the sauce recipe, just like in childhood!

Ingredients for approximately 1 liter of finished sauce:

  • Tomatoes – 1.5 kg
  • Sweet apples – 0.6 gr.
  • Garlic – 6 cloves
  • Ground cinnamon – 1/3 tsp.
  • Ground nutmeg – 0.5 tsp.
  • Ground black pepper – 0.5 tsp.
  • Ground coriander – 1 tsp.
  • Allspice – 3 peas
  • Carnation – 3 umbrellas
  • Sol – 1 h. l.
  • Sugar – 1 tbsp. l.
  • Vinegar 9% – 1 tbsp. l.

How to cook:

  1. Wash the tomatoes and cut them large, at random, peel the garlic and crush it with a knife.
  2. We peel the apples from seeds and cut them into slices, put them together with the tomatoes and garlic on the fire and bring to a boil.
  3. Add spices, salt and sugar, reduce heat and simmer for 20-30 minutes, stirring occasionally and skimming off the foam.
  4. Then rub everything through a sieve, pour in vinegar and bring to a boil again.
  5. Boil to the desired consistency over low heat, add salt and sugar.
  6. Pour the sauce into pre-sterilized jars, roll up or screw tightly, turn over and keep warm.

As you can see, making Krasnodar sauce for the winter at home with your own hands is not at all difficult. It’s not for nothing that this Krasnodar sauce from the USSR replaced ketchup and was used in the composition gravy for meatballs.

Quick recipe for the winter


In this recipe you don’t have to put everything through a sieve; a blender or chopper will do everything for you. But you will need to spend time peeling the tomato.

But there is no need to wait for the tomatoes and apples to soften; the machine will turn everything into puree and all that remains is to evaporate the sauce. A food processor or regular meat grinder will also work.

You can put everything through a juicer, then you don’t need to peel the products, the pulp will separate on its own. To taste, thiscooked simple and quick Krasnodar sauce is not inferior to the usual one.

We will need:

  • Tomatoes – 1.5 kg
  • Sweet apples – 0.6 gr.
  • Garlic – 6 cloves
  • Ground cinnamon – 1/3 tsp.
  • Ground nutmeg – 0.5 tsp.
  • Ground black pepper – 0.5 tsp.
  • Ground coriander – 1 tsp.
  • Ground allspice – 1/4 tsp.
  • Sol – 1 h. l.
  • Sugar – 1 tbsp. l.
  • Vinegar 9% – 1 tbsp. l.

How to do:

  1. Cut the tomatoes and pour boiling water over them, then remove the skin and stem, cut into pieces.
  2. Peel and seed the apples, chop them, and peel the garlic.
  3. Place everything in a blender bowl and blend until smooth.
  4. Put on fire, add the remaining ingredients except vinegar, bring to a boil.
  5. Reduce heat and stir until excess liquid evaporates.
  6. Add vinegar, boil and quick Krasnodar tomato sauce is ready!

All you have to do is pour it into jars and preserve it for the winter. If you need to prepare it as a sauce for barbecue, like in kebab shops, then you can cook it faster.

You don’t have to wait for the sauce to evaporate, but simply thicken it with starch. To do this, dilute a teaspoon of starch in 100 milliliters of cold water and add to the sauce in portions.

This way you will get the consistency you need without waiting for the sauce to simmer for a long time on the fire. But the longer you cook the Krasnodar sauce, the more concentrated it is and, accordingly, the tastier it will be.

Spicy kebab sauce Krasnodar

This recipe is for lovers of spicy and savory sauces. It certainly won’t be Yellow Lantern sauce, but it will come close to sriracha or jalapeno sauce in sharpness.


  • Tomatoes – 1.5 kg
  • Sweet apples – 0.6 gr.
  • Garlic – 8 cloves
  • Ground cinnamon – 1/3 tsp.
  • Ground nutmeg – 0.5 tsp.
  • Ground black pepper – 1 tsp.
  • Ground coriander – 1.5 tsp.
  • Cayenne pepper – 0.5 tsp. or a fresh pod.
  • Sol – 1 h. l.
  • Sugar – 1 tbsp. l.
  • Vinegar 9% – 2 tbsp. l.


  1. If you have fresh pepper, then it is better to peel it from the seeds; they will be spicier, but this is a matter of taste.
  2. Prepare the tomatoes, apples and garlic as in any of the recipes above and put it on the fire to boil.
  3. After boiling, add everything except vinegar and pepper, simmer, stirring for 20 minutes.
  4. Then, if you made it with a blender, add vinegar and taste for salt and sugar; if you cooked it with the skin, then rub it through a sieve.
  5. When you have obtained the basic taste of salt, acid and sugar, add pepper and bring to a boil again.
  6. After waiting for the thickness of the sauce you need, pour it into jars.

You can also prepare this hot Krasnodar sauce for the winter. It is rolled into jars and stored in the same way as the first two recipes.

Perfect as sauce for khinkali or gravy for stuffed peppers. And of course, to any kind of pasta, be it spaghetti sauce or pasta. But, like barbecue sauce, it has no equal.

Krasnodar sauce with bell pepper and without apples

Krasnodar tomato sauce


This is of course not a classic Krasnodar sauce, but it also has its place. This awesome homemade Krasnodar sauce is prepared without apples, but with bell peppers.

You need to take sweet, fleshy peppers, such as Hercules, Maestro or Ramiro. The usual variety – Swallow – is also suitable, but it is not red, although this will not be noticeable in the sauce.

Sauce composition:

  • Tomatoes – 1.5 kg
  • Pepper – 4 pcs.
  • Onions – 2 pcs.
  • Carrots – 3 pcs.
  • Garlic – 4 cloves
  • Ground cinnamon – 1/3 tsp.
  • Ground nutmeg – 0.5 tsp.
  • Ground black pepper – 0.5 tsp.
  • Allspice peas – 4 peas
  • Bay leaf – 1 pc.
  • Vinegar 9% – 2 tbsp. l
  • Salt – 1 tbsp. l.
  • Sugar – 100 gr.

Step by step recipe:

  1. First of all, we remove all the seeds, partitions and stalks of the tomatoes and peppers, cut them for the chopper.
  2. Peel the carrots, onions and garlic and chop them so that it is easier for the blender.
  3. Grind everything into a paste and put it on the fire to boil; after boiling, add the rest of the ingredients.
  4. Reduce the heat and wait for the future sauce to reduce by about 1/3.
  5. After this, you need to rub everything through a sieve and put it back to boil, after tasting it first.
  6. If you are satisfied with the taste and consistency, then just boil the sauce and you can pour it into containers.

As you can see, the recipe for making Krasnodar sauce with pepper is slightly different from the classic one. Due to the absence of sweet apples, more sugar is added. After all, Krasnodar sweet sauce.

On its basis you can make sauce for country-style potatoes or use it as sauce for manti .

Krasnodar tomato paste sauce

This recipe is not for winter twisting. But it’s perfect as a sauce for dumplings or for French fries. This Krasnodar deep sauce is very easy to prepare. And in the end you will get a quick homemade Krasnodar sauce in a hurry.


  • Tomato paste – 100 gr. (4 tbsp)
  • Applesauce – 1 jar (125 gr.)
  • Garlic – 2 cloves
  • Vegetable oil – 1 tsp.
  • Balsamic vinegar – 1 tsp. l.
  • Ground cinnamon, nutmeg, pepper, coriander – a pinch
  • Salt, sugar to taste

How to make the sauce:

  1. In a frying pan or in a thick-bottomed saucepan, fry the tomato paste in oil, this will remove its metallic taste.
  2. Add grated or pressed garlic, balsamic vinegar and spices with puree.
  3. Add salt and sugar, let it boil, then cool and serve the tomato sauce.

For homogeneity, you can punch everything with a blender. Use regular baby applesauce or make your own. To do this, bake the apples in the oven until they are soft, then puree them.

Since this is not an authentic Krasnodar sauce, we recommend using balsamic vinegar. It will enhance and complement the sauce with its aroma and taste.

This is an excellent ready-made sauce for shawarma, and you can also use it to prepare sauce for rice or mashed potatoes.
