A classic version of tomato sauce that can successfully replace store-bought ketchup for pizza. This dressing is also suitable for pasta and lasagna, and pizza with it turns out as if from a real Italian pizzeria!

Ingredients:

  • Fresh tomatoes – 2 kg;
  • White onion – 250 g;
  • Bulgarian red or orange pepper – 250 g;
  • Garlic – 7 medium cloves;
  • Oregano – 1.5 h. l.;
  • Dried basil – 1.5 tsp;
  • Vegetable oil – 2 tbsp. l.;
  • Apple cider vinegar – 3 tbsp. l.;
  • Table salt – 1 tbsp. l.;
  • Granulated sugar – 2 tbsp. l.

How to cook:

  1. Wash and peel vegetables, remove seeds from peppers, peel tomatoes;
  2. Cut the vegetables into pieces, chop the garlic;
  3. Pass the mixture through a meat grinder or blender until pureed;
  4. Transfer the mixture to a thick-bottomed saucepan, bring to a boil and cook for half an hour over low heat;
  5. Pass the sauce through a sieve, discarding the tomato seeds;
  6. Return to the stove, cook until thickened, add salt, sugar and herbs;
  7. Add oil, cook for about 10 minutes;
  8. Add vinegar, stir, leave on fire for another 3 minutes;
  9. Pour the sauce into jars and cover until cool.

Basil sauce

Pizza sauce for the winter with basil

An original recipe for pizza sauce with basil, which is as easy as possible to make at home.

Composition:

  • Tomatoes – 2 kg;
  • Fresh basil – 1 large bunch;
  • Chili – 2 pcs.;
  • Garlic – 1 head;
  • Onions – 2 pcs.;
  • Tomato paste – 2 tbsp. L.;
  • Fine salt – ½ tbsp. l.;
  • Sugar – 1 ½ tbsp. L.;
  • Provençal herbs – 1 tbsp. l.;
  • Olive oil – for frying.

How to do:

  1. Wash and chop the tomatoes, chop with a blender, place in a saucepan;
  2. Chop the pepper, chop half the herbs and garlic, mix with the pepper;
  3. Grind the mixture with a blender and place in a saucepan with tomatoes;
  4. Add salt, put on fire for 40 minutes after boiling;
  5. Chop the onion, fry in a frying pan;
  6. Reduce heat in the pan, add onion, cook for another 8-10 minutes;
  7. Chop the remaining garlic and herbs, add to the sauce along with herbs and sugar;
  8. Stir, cook for another 10 minutes, pour into jars;
  9. Roll up the jars, turn them over and leave them in a warm place until they cool completely.

Sauce from Olga Shobutinskaya

Another delicious preparation for the winter, which is suitable for greasing the base of pizza. Preparing tomato sauce from Olga Shobutinskaya is not difficult, and the time including cooking will take no more than two hours.

Ingredients:

  • Red or yellow tomatoes – 1 ½ kg;
  • Sweet bell pepper – ½ kg;
  • Garlic – 1 clove;
  • Table salt – ½ tbsp. l.;
  • Dried basil or other favorite herbs – ½ tbsp. l.

Step by step recipe:

  1. Wash and peel the vegetables. Cut into small pieces;
  2. Place in a saucepan or saucepan with a thick bottom;
  3. Add chopped garlic, basil and salt to the vegetables;
  4. Bring to a boil, then reduce heat and simmer for about 1.5 hours until the mixture has noticeably reduced and thickened;
  5. Puree with an immersion or stationary blender, grind through a fine sieve;
  6. Cool, pour into small plastic containers or seal into jars. Cover with lids and place in the freezer.

Incredibly tasty Italian sauce for the winter. With this sauce, pizza will receive an even richer taste and aroma, and as an experiment, you can add it to other dishes that combine with tomatoes.

Composition:

  • Tomatoes – 1 ½ kg;
  • Sweet red pepper – ½ kg;
  • Garlic – 1 clove;
  • Salt – ½ tbsp. L.;
  • Italian dried herbs – ½ tbsp. l.

How to cook:

  1. Wash the vegetables, cut into small pieces, place in a saucepan with thick walls and bottom;
  2. Add chopped garlic, salt, herbs to the pan;
  3. Cook for about 1.5 hours over low heat, stirring occasionally;
  4. Using an immersion blender, puree the vegetable mixture until smooth;
  5. Strain through a sieve to remove seeds and peel;
  6. Pour into serving containers.
