Hunter’s sauce is primarily a mushroom sauce originally from France. Served with meat dishes prepared from what hunters were able to obtain.
This includes venison, duck and hare, and nowadays baked veal or escalope. We will also give recipes for Russian hunting sauces that can be prepared in a hurry. After all, when hunting and outside the kitchen, you need to cook quickly and unpretentiously, but at the same time satisfying.
Classic recipe with mushrooms
To tell the truth, there is no single classic recipe. For some, the classic is red hunting sauce, for others it is white, but mostly it is always made from mushrooms.
Our recipe is based on champignons, but any mushrooms can be used. If you have wild ones, then you need to boil them first, we have separate recipes about this.
We will need:
- Champignons – 200 gr.
- Garlic turnip – 1 pc.
- Garlic – 2 cloves
- Demiglas – 100 ml
- Water – 100 ml.
- Tomato paste – 3 tbsp. l.
- Vegetable oil – 2-3 tbsp. l.
- Bay leaf – 1 pc.
- Salt and pepper to taste.
How to cook:
- Chop onions and mushrooms in any way you like.
- Pour oil into a frying pan and begin to fry the onion until transparent.
- Then turn up the heat and add the mushrooms, fry until nicely colored.
- Then add tomato paste and stir it with mushrooms, warm it up thoroughly (this will remove the metallic taste).
- Now you can add demi-glace and a little water, do not pour it all at once.
- Add laurel, finely chopped garlic, pepper and add salt.
- After 5 minutes, take out the bay leaf and, if necessary, add water or, on the contrary, evaporate to the desired thickness.
- Red hunting sauce with onions and mushrooms is ready!
Of course demi-glace can be replaced with any meat broth, but then remove the water. And if you use cream instead of tomato paste, you get white hunting sauce.
In Germany, Jäger Sauce (hunting sauce) is eaten with pork schnitzel. But in fact, add it to mashed potatoes, pasta and porridge.
Sausage sauce
This hunting sauce recipe is for real lovers of hunting and fishing. The ingredients are simple and do not spoil when camping without a refrigerator. And the most important thing is that they are cooked in the same cauldron.
For two people we will need:
- Hunting sausages – 5 pcs.
- Onion – 1 pc.
- Carrots – 1 pc.
- Garlic – 2 cloves
- Tomato paste/ketchup – 2 tbsp. l.
- Vegetable oil – 3 tbsp. l.
- Water – 100 ml.
- Salt, spices to taste
- Greens optional
How to make the sauce:
- Pour oil into a cauldron and fry the onion, chopped into half rings, stirring constantly.
- After a couple of minutes, add chopped carrots (by any method) and fry until crisp.
- We cut the sausages into rings and fry briefly along with the onions and carrots.
- It’s time to add the tomato paste, mix and stir in the garlic (for convenience, cut it into slices).
- After a couple of minutes, add water, bring to a boil and you’re done.
- All that remains is to add the spices that you have on hand and add salt; greens won’t hurt either.
- Hunting sauce with smoked sausages is ready!
Of course, if you cook at home, you can grate the carrots and garlic. In nature, there is usually not even a cutting board, so everything is cut large.
If you add more water and add pasta after boiling, then you have a complete dinner. You could say pasta with hunting sausages in tomato sauce. Also, this sauce with hunting sausages is perfect for rice, porridge or potatoes.
Satsebeli hunting sauce
This is an excellent sauce for barbecue in nature. Of course, it is better to prepare it at home in advance. This will not only be more convenient, but it will also give it time to brew. But it’s very easy to prepare it outside the home, because it’s a quick recipe.
We will need:
- Tomato paste – 200 gr.
- Cilantro – 1 bunch
- Garlic – 4 cloves
- Vegetable oil – 1 tsp.
- Water – 100 ml.
- Suneli hops – 1 tbsp.
- Vinegar 6% – 1 tsp. l.
- Adjika (dry) – 1 tsp.
- Salt, pepper to taste
Cooking process:
- Finely chop the cilantro and grate the garlic on a fine grater.
- Pour everything into a cup and add oil, water and vinegar, as well as tomato paste.
- Add spices and mix well, salt to taste.
- Let it brew for ten minutes and the sauce is ready!
This sauce is certainly not real satsebeli, but no worse and very tasty. Suitable not only for barbecue, but also for fish, vegetables, and just a sandwich with sausage.
