Pesto from sun-dried tomatoes
Fresh or canned pesto sauce with sun-dried tomatoes can be added to almost all meat dishes, and can also be used as a spread on toasted bread. The classic sauce recipe is as follows.
Ingredients:
- Oil-dried tomatoes – 1 ½ cups;
- Garlic – 2 medium cloves;
- Basil – 1 fresh bunch;
- Hard cheese – 100 g;
- Black pepper, salt, olive oil – to taste.
How to cook:
- Grind the ingredients in a blender: sun-dried tomatoes without separating from the oil, basil, garlic, previously passed through a press, salt and pepper. Grind until you obtain the required consistency at your own discretion;
- Grate the hard cheese, add to the mixture and blend again. To obtain a more liquid composition, add oil;
- Transfer the sauce into a glass jar with a tight lid and store in the refrigerator. You can use the prepared sauce immediately, but it is recommended to preheat it before serving with pasta.
Sauce with mayonnaise
An original and unusual-tasting sauce, the consistency reminiscent of the usual mayonnaise. You can serve it with meat, fish or season vegetable salads, and making the sauce yourself is quite simple.
Ingredients:
- Table egg – 2 large pieces;
- Sunflower oil – 300 ml.
- Paste mustard – 1 tsp;
- Vinegar 9% – ½ tsp;
- Parmesan cheese or other hard cheese – 50 g;
- Sun-dried tomatoes – 50 g;
- Canned olives – 7-10 pcs.;
- Salt, pepper, basil – to taste.

Step by step recipe:
- First you need to prepare homemade mayonnaise. To do this, mix eggs, mustard, spices and vinegar in a blender. It is necessary to mix the products until a thick foam forms, and then pour in the oil in a thin stream;
- Grate the cheese on a fine grater, add to the sauce, mix thoroughly;
- Chop the basil, add to the mayonnaise, stir;
- Chop the olives and tomatoes, add to the sauce, mix everything again.
For a more dietary option, you can prepare PP mayonnaise and even lean.
For salad
In this format, the sauce is most often used as a flavorful salad dressing. It is easy to prepare at home, and the taste is always rich, juicy and pleasant.
Ingredients:
- Large sun-dried tomatoes – 2 halves;
- Balsamic vinegar – 1 ½ tbsp. l.;
- Red wine vinegar – 1 ½ tbsp. l.;
- Garlic – ½ clove;
- Sol – ½ tsp;
- Olive oil – 1/3 cup;
- Fresh or dried basil – 1 tbsp. l.
How to cook:
- Place the sun-dried tomatoes in a container with boiling water and leave for about 3 minutes. After this, pour out the mixture and chop the tomatoes as desired;
- Place all ingredients in a blender or food processor and grind until smooth. Basil can not be mixed initially with other products, but added later;
- Pour the sauce into a container and close with a tight lid.
For a variety of tastes, you can add different ingredients to the composition at your own request, for example, crushed cashew nuts.
Italian dressing
A classic Italian sun-dried tomato sauce that’s great as an extra sauce for many types of pasta and pasta.
Ingredients:
- Dried tomatoes – 6 pcs.;
- Olive oil – 125 ml;
- Balsamic vinegar – 2 tbsp. l.;
- Garlic – 2-3 cloves;
- Basil, thyme or other favorite herb – 1 tbsp. l.;
- Fine salt – to taste;
- Shallot – 2 heads;
- Pitted olives – 6-7 pieces.
How to cook:
- Peel the onion and chop into four equal parts. Cut the garlic in half, chop the tomatoes larger;
- Puree the onion and garlic in a blender;
- Add tomatoes, olives, vinegar and herbs to the blender, salt and pepper;
- Pour the mixture with vegetable oil, continuously grinding with a blender;
- Adjust taste with salt and pepper as desired.
Yogurt-mustard dressing
The word dressing, new in our language, is already quite actively used in cooking, denoting in fact a simple sauce. And this is one of the options yoghurt-based sauce.
Ingredients:
- Sun-dried tomatoes – 100 g;
- Greek yogurt – 250 ml;
- Mustard in paste – 1 hour. l.;
- Apple cider vinegar – 1 tbsp. l.;
- Dried greens (dill, parsley) – 1 h. l.
How to do:
- Place all the listed ingredients in a blender or other grinding equipment for the kitchen, puree until smooth;
- Transfer to a glass container with a lid and refrigerate for 2 hours to infuse thoroughly.
We offer a variant of salad dressing with sun-dried tomatoes, which goes perfectly with hearty salads of poultry, meat, fish and vegetables.
Training in Japanese
In Japan, salad sauce made from sun-dried tomatoes is called “wafu”, and now this Asian product is quite popular here too.
Composition:
- Sun-dried tomatoes – 6 pcs.;
- Rice vinegar – 6 tbsp. l.;
- Soy sauce – 6 tbsp. l.;
- Sesame oil – 6 tbsp. l.;
- Red onion – 1 small head;
- Sugar – 2 tbsp. L.;
- Sesame – 1 tbsp. l.
Cooking steps:
- Chop the onion as finely as possible, you can grate it, strain the mixture through a fine sieve, obtaining 2 tablespoons of liquid;
- Beat the remaining ingredients with the resulting liquid with a blender until a single mixture is obtained;
- Transfer the dressing into a bottle or sauce boat and serve. It is not recommended to store the sauce for more than 13-14 hours in the refrigerator, since in the future the taste of the dressing will be significantly distorted.
