So why not make a sauce with pickles. In addition, many pickled cucumber sauces do not require fancy ingredients. Quite the contrary, you just need to look in the refrigerator and make sauce from what you have.

We can say that the recipe for sauce with pickled cucumber is classic and comes from the USSR. If you don’t want to eat unhealthy store-bought mayonnaise, you can prepare homemade, according to our recipe. This sauce made from pickled cucumbers and mayonnaise is good for fish.

We will need:

  • Mayonnaise – 4 tbsp. l.
  • Pickled cucumber – 1 pc. 
  • Garlic – 1 clove
  • Salt, pepper to taste

How to make sauce with pickles:

  1. Grate the cucumber on a fine grater and squeeze out the juice.
  2. We also crush the garlic or press it through a garlic press.
  3. Mix everything with mayonnaise, add salt and pepper if necessary.
  4. Cucumber sauce with garlic and mayonnaise is ready!

As you can see, the composition of the sauce: mayonnaise, pickles, garlic, herbs (by the way, you can also add), all this is almost always on hand. You can say this sauce is a la quick tartare.

This sauce is perfect for sandwiches with sprats. This sauce can also be used as a salad dressing. And it is quite possible to prepare the sauce with pickled cucumbers and mayonnaise, but the taste will be slightly different.

This sauce with pickles will be more dietary, especially if you use low-fat sour cream. This white sauce with pickles will go great with fish, especially river fish. For example, carp or crucian carp in sour cream sauce with cucumber sourness – you will lick your fingers.

We will need:

  • Pickled cucumbers – 2 pcs.
  • Sour cream – 4 tbsp. l.
  • Garlic – 1 clove
  • Lemon juice – 0.5 tsp.
  • Turmeric or sweet paprika for color – 0.5 tsp.
  • Dill – 0.5 bunch
  • Salt and pepper to taste
How to make pickled cucumber sauce:
  1. Three cucumbers on a coarse grater, then squeeze out the juice.
  2. Press the garlic through a garlic press.
  3. Finely chop the dill.
  4. Mix everything with sour cream, salt and pepper to your taste.
  5. If desired, tint with turmeric or paprika, half a teaspoon.
  6. The sauce with sour cream and pickles is ready!

As you can see, making fish sauce with pickles and sour cream is very easy. By the way, you can make sauce from mayonnaise, sour cream, and pickles.

Just take equal amounts of sour cream and mayonnaise. As you understand, it is not necessary to tint the sauce, but you can make it spicier. Add chopped jalapeno pepper or ground chili and you get a spicy pickle sauce.

This sauce for country-style potatoes made from mayonnaise is very good for just boiled potatoes. It can also be used as a dip sauce by dipping french fries into it .

We will need:

  • Pickled cucumbers – 2-3 pcs.
  • Capers – 2 tbsp. l.
  • Sour cream – 4 tbsp. l.
  • Any mustard – 1 tsp.
  • Boiled egg – 1 pc.
  • Sweet onion – 1 tbsp. l. in crushed form
  • Dill – 1/3 bunch
  • Salt to taste.

Recipe for white sauce with pickles:

  1. Chop cucumbers and onions into small cubes.
  2. Finely chop the capers, dill and egg (the egg can be grated on a medium grater).
  3. Mix with sour cream and mustard, add salt if necessary.
  4. The sauce for potatoes with pickles is ready!

This sauce is not bad for mashed potatoes. Potatoes can be combined with pickled cucumber and sour cream in any form. And the sauce with pickled cucumber for shawarma is very good.

Scandinavian sauce made from cucumbers and mustard, it’s practically a Relish sauce. By sweet onions we mean white, red or shallots.

We will need:

  • Pickled cucumbers – 3 pcs.
  • Sweet onion – 1 onion.
  • Dijon mustard – 1 h. l.
  • White wine vinegar – 1 tsp.
  • Vegetable oil – 1 tbsp. l.
  • Sugar – 0.5 h. l.
  • Salt to taste

How to make Scandinavian pickled cucumber sauce:

  1. Chop the onion into small cubes and place in a cup, add vinegar.
  2. Three cucumbers on a fine grater and squeeze the juice into the onion, let it marinate for 10 minutes.
  3. Then drain the liquid from the onion and mix it with cucumbers and other ingredients.
  4. If necessary, add some salt.

This salad sauce is very good  for hamburgers and hot dogs. And with potatoes, whether mashed, boiled or baked in the oven.
