How to make garlic sauce at home with your own hands

Classic recipe

Let’s start by preparing a classic garlic sauce with butter. It is based on Roux sauce.

We will need:

  • Butter –1 tbsp. l.
  • Garlic – 5-6 cloves
  • Wheat flour –1 tbsp. l.
  • Broth (meat or vegetable) – 150 ml
  • Salt and ground pepper to taste

How to cook:

  1. Melt the butter over low heat and heat the flour in it.
  2. Grate the garlic or use a garlic press.
  3. Pour in the broth and bring to a boil, then add the garlic and reduce the heat.
  4. Simmer for 5-10 minutes over low heat, during this time add salt and pepper.
  5. For homogeneity, you can use a blender to blend the sauce.

At the end, you can add finely chopped herbs; the sauce made from cilantro with garlic turns out very tasty. You can also use roasted garlic. Roasted garlic sauce will have a milder taste.

Garlic puree from Lazerson

Ilya Isaakovich Lazerson is a great chef and just a good person. And here is the recipe for his favorite garlic puree for any meat product, especially jellied meat.


  • Garlic – 1-2 heads
  • Milk
  • Cream 20%
  • Salt


  1. Peel the garlic, put it in a saucepan and add water so that it just barely covers the garlic.
  2. Cook for 2-3 minutes after boiling, then drain the water using a sieve.
  3. Pour half the milk and cook the same way after boiling, but for 5 minutes, then drain the milk
  4. Pour in the second half of the milk and cook for 10-15 minutes and drain the milk again
  5. Pour in the cream, after boiling, reduce and simmer for a couple of minutes
  6. Beat everything with a blender while adding salt to taste

Everyone should try this. Try this garlic sauce for boiled tongue, cutlets, and boiled pork. Preferably homemade. As Ilya Isaakovich himself said: “You don’t need to eat with Krakow sausage!”

Sauce for dumplings with borscht

The sauce for fried eggplants is also suitable. Making this garlic herb sauce at home couldn’t be easier.

We will need:

  • Garlic – 5-6 cloves
  • Dill/parsley – 1 bunch
  • Vegetable oil (odorless) – 50-100 ml 
  • Salt – 1 pinch

How to cook:

  1. Peel and chop the garlic in any way (on a grater, with a garlic press, or grind with salt using a knife)
  2. Wash the greens and chop them finely
  3. Add everything to the sunflower oil and mix thoroughly (it is better not to use a blender so that the texture of the sauce can be felt better)
  4. Add salt to the sauce and add pepper if necessary.

It’s better to grease the pampushki with garlic-dill sauce while they are still hot.

This sauce can be poured over not only donuts, but also grilled vegetables. Feel free to use it as sauce for country-style potatoes.


This Georgian sauce is often served with khinkali, but it is also excellent with dumplings .

We will need:

  • Tomatoes – 2 pcs.
  • Vegetable oil – 1 tbsp. l.
  • Garlic – 3 cloves
  • Chili pepper – 0.5 pods
  • Greens – 0.5 bunch
  • Utsho-suneli – 0.5 h. l.
  • Salt, sugar to taste.

How to do:

  1. We remove the skin from the tomatoes or pass them through a meat grinder; you can chop them with a blender.
  2. Then pour oil into the pan and add tomatoes, evaporate excess moisture for 5-6 minutes.
  3. Chopped garlic, chili pepper and utskho-suneli add to the sauce, simmer for a couple more minutes
  4. Add salt, if it’s too sour, balance it with sugar, add herbs, turn it off and you’re done!

The sauce is good both hot and cold. When cold it is perfect for barbecue. By the way, tomatoes can be replaced with tomato paste, slightly diluted with water. And get a great burger sauce. If you make sauce for khinkali, then use cilantro.

Creamy garlic

We will prepare this sauce with cream based on Béchamel sauce. The result will be a thick dip sauce suitable for langoustines or as a sauce for shrimp. .


  • Garlic – 2 cloves
  • Butter – 1 tbsp. l.
  • Cream – 200 ml.
  • Wheat flour – 2 tsp.
  • Nutmeg and a pinch of salt

How to do:

  1. Fry the flour in butter until it smells delicious and nutty.
  2. Then pour in the cream in a thin stream, stirring all the time with a whisk until smooth.
  3. Grate the garlic or press it through a garlic press and add it to the sauce.
  4. Salt, add nutmeg and the sauce is ready!

This sauce is suitable for pasta and spaghetti,  for rice and bulgur, for meat, chicken and rabbit. It can even be used as a base white sauce for pizza.

Sour cream and garlic

Sour cream and garlic sauce is one of the classic dips for French fries. It is also served with shrimp, squid and chicken.


  • Smetan – 200 gr.
  • Garlic – 2 cloves
  • Dill – 0.5 bunch
  • Salt to taste


  1. We grate the garlic, chop the dill along with salt, so it will better release its aroma.
  2. Then mix everything with sour cream, taste for salt and add more salt if necessary.
  3. Let it brew for 10-15 minutes and eat.

You can also tint it with paprika or turmeric. By the way, it is great as sauce for manti. Garlic sauce with mayonnaise is also prepared. In addition, you can mix sour cream with mayonnaise and you will get a wonderful white sauce with garlic.


This sauce is more of a marinade or salad dressing. Although you can pour it over baked vegetables in ovens or on grills and now it already works as a sauce.


  • Vegetable oil – 3 tbsp. l.
  • Soy sauce – 2 tbsp. l.
  • Mustard – 1 tsp.
  • Lemon juice – 1 tsp.
  • Liquid honey – 0.5 tsp.
  • Garlic – 1 clove


  1. Chop the garlic well and mix with oil.
  2. Add lemon juice, mustard and soy sauce with honey to them, mix.
  3. Mustard-garlic sauce is ready!

If you have solid honey, melt it in the microwave. Olive oil is better suited here, with its slight bitterness. But you can use any mustard. Try it with regular canteen and with Dijon.

Curd and garlic

But in this sauce it is better to combine dill with parsley, although this is a matter of taste.


  • Not dry cottage cheese – 200 gr.
  • Sour cream – 3 tbsp. l.
  • Greens – 1 bunch
  • Garlic – 3 cloves
  • Vegetable oil – 1 tbsp. l.
  • Salt, pepper to taste


  1. It is better to chop the garlic and herbs a little, this will help the blender.
  2. Then place them, cottage cheese, sour cream and vegetable oil in a blender glass and beat.
  3. Add salt and pepper and the sauce is ready!

As you can see, this is quite a dietary sauce, especially if you replace sour cream with yogurt or yogurt. This sauce is served with meat, chicken, and chopped vegetables.
