After all, tuna is called sea beef or sea chicken; it does not have a pronounced fishy taste or smell. We will teach you how to prepare tonnato sauce step by step and tell you what dishes besides veal it is also suitable for.

Classic tonnato sauce recipe

We have already expressed our respect to chef Ilya Isaakovich Lazerson more than once, and therefore we will prepare a classic version of the sauce according to his recipe.

Its main principle, tonnato sauce is made from whole raw eggs and, of course, tuna. Almost like homemade mayonnaise, but both yolk and white are used.

This sauce has the same base with Caesar salad sauce and has a lot in common, but still, it is completely different. And as Lazerson says, you can eat your sole with it.

Sauce composition:

  • Raw egg – 3 pcs.
  • Tuna canned in its own juice – 1 jar
  • Not spicy mustard – 1 tsp.
  • Parmesan cheese – 20 gr.
  • Anchovies – 2 pcs.
  • Garlic – 1 clove
  • Olive oil – 250 ml
  • Salt, sugar a pinch

How to prepare sauce for Vitello tonnato:

  1. Break the eggs into a blender glass and begin beating.
  2. Then add mustard, salt, sugar and continue punching.
  3. Without stopping working with the blender, we begin to pour in the oil in a thin stream.
  4. When you get a sauce similar to mayonnaise, add grated cheese, garlic, anchovies and tuna fillet, without liquid.
  5. Beat everything until smooth and the sauce for Vitello tonnato is ready!

And this is an improved version of canned tuna sauce. The composition is richer, but it is easier to prepare than the classic one.


  • Boiled egg – 2 pcs.
  • Boiled yolk – 2 pcs.
  • Canned tuna in oil – 1 jar
  • Worchester – 1 tbsp. l.
  • Capers – 1 tbsp. l.
  • Garlic – 1 clove
  • Juice of one lime
  • Dijon mustard – 1 tsp.
  • Anchovies – 3 pcs.
  • Vegetable oil – 100 ml
  • Olive oil – 50 ml
  • Salt, sugar to taste

Sauce recipe:

  1. Put eggs, yolks, tuna with oil, Worcestershire, capers, garlic, mustard and anchovies into a glass of blender, blend well. a>
  2. Then add both oils and lime juice with sugar, beat again.
  3. Test for salt and acid, add if necessary and the tonnato is ready!

The taste of this sauce is more intense and is suitable not only for beef, but also for turkey. Even as a dressing for Olivier salad, which with such a sauce is simply finger-licking!

Simple and quick tonnato sauce with mayonnaise

This tonnato sauce recipe is simplified with more affordable ingredients. But this is one of the existing options, it was prepared by chef Vasily Emelianenko.

We will need:
  • Mayonnaise – 2 tbsp. l.
  • Boiled egg – 1 pc.
  • Canned tuna – 1 jar
  • Pickled jalapeno – 1 tbsp. l.
  • Red onion – 1/4 head
  • Dill – 0.3 bunch
  • Olive oil – 100 ml
  • Lemon juice – 1 tbsp. l.
  • Salt, pepper to taste

How to make tonnato sauce:

  1. Put an egg, tuna without liquid,  jalapeño pepper, onion and mayonnaise into the chopper bowl, punch through.
  2. Chop the dill and add it to the sauce along with oil and lemon juice and punch through.
  3. Season with pepper, add salt and the simple sauce for tonnato Vitello is ready!

You can use any tuna, but do not discard the juice or oil, you may have to add it at the end. After all, this recipe contains little oil and the sauce may be thick, but it should be like sour cream.

Pickled jalapeno replaces capers here and also adds some spice. By the way, for this recipe you can prepare healthy dietary mayonnaise. And thereby reduce calorie content by three times.
