  • Lean mayonnaise – 3 tbsp. l.
  • Mustard – 1 tsp.
  • Pickled cucumber – 1 pc.
  • Garlic – 1 clove
  • Greens – 0.3 bunch
  • Salt and pepper to taste

How to prepare the sauce:

  1. First of all, peel the cucumber if it is hard, then grate it on a fine grater.
  2. We also grate the garlic or press it through a garlic press.
  3. Squeeze the cucumber and add to the mayonnaise, add garlic, mustard and chopped herbs.
  4. Stir, pepper and add salt, the sauce is ready!

This sauce needs to sit for a little while so that the garlic is evenly distributed throughout the sauce. This sauce is very good on days when you can fish, because it was invented specifically for fish.

You could say it’s a lean tartar sauce. You can also pour it over boiled potatoes or simply spread it on a piece of bread. Dill and green onions are good greens.

Recipe for lean tomato sauce for pizza and pasta

Lenten tomato sauce

Let’s make a lean tomato sauce with an Italian twist. It goes perfectly with lean pizza, and of course with pasta and spaghetti.

We’ll use fresh herbs, but dried herbs will work just as well. This lean sauce for pizza and porridge is very good, but it will also be very tasty with potatoes. And how is a lean sauce for vegetables, especially those grilled on charcoal, better suited for vegan kebab?


  • Puree tomatoes – 1 can (200 gr.)
  • Olive oil – 2 tbsp. l.
  • Balsamic vinegar – 1 tbsp. l.
  • Garlic – 1 clove
  • Onion – 1 pc.
  • Basil – 0.5 bunch
  • Sugar – 0.5 h. l.
  • Salt, pepper to taste

How to make lean tomato sauce:

  1. Finely chop the onion and begin to fry it in oil until golden brown.
  2. Then add our tomatoes and chopped garlic with vinegar.
  3. Simmer for about five minutes, then add sugar and pepper, taste for salt and add more salt if necessary.
  4. Turn off the switch and add the chopped basil, mix again and the sauce is ready!

Of course, tomatoes can be replaced with tomato paste diluted with water, or better with Krasnodar sauce. Tomato juice with pulp is also good, but of course sauce with tomatoes is a completely different matter.

Puréed tomatoes are mostly made in Italy or Spain, and they know a lot about tomatoes. Well, of course, you can take odorless vegetable oil, and apple cider vinegar. All these substitutions will move the sauce a little away from the Italian taste, but it will also be tasty, and most importantly lean.

This is a lean mushroom sauce for pasta, although it goes great with mashed potatoes or cereal. It’s just as good as lean pizza sauce.

Preparing a lean mushroom sauce from champignons, but wild mushrooms will be even tastier and more aromatic. You just need to boil them first. If you want to prepare a recipe for dried forest mushrooms, then soak them in advance for about an hour.

We advise you to take royal champignons, they have a stronger aroma than ordinary ones. But if you prepare Lenten sauce from porcini mushrooms, then it’s just the bomb!

We will need:

  • Champignons – 300 gr.
  • Soy milk – 200 ml
  • Wheat flour – 1 tbsp. l.
  • Onions – 1 pc.
  • Vegetable oil – 2 tbsp. l.
  • Garlic – 1 clove
  • Salt, pepper to taste

How to make Lenten sauce from mushrooms and soy milk:

  1. Chop the onions and mushrooms as small as you like, then fry them in vegetable oil until golden brown.
  2. Add flour, mix and fry a little along with mushrooms and onions.
  3. Pour milk and stir until the sauce thickens, then add chopped garlic.
  4. Simmer for a couple of minutes, stirring, pepper and salt to taste, the sauce is ready!

You can take any plant-based milk, there is now a lot of it to choose from, coconut milk is also suitable. And if you replace wheat flour with whole grain or rice flour, the sauce will also be dietary.

This lean sauce with mushrooms can be blended with a blender and you will get a mushroom soup-puree. And be sure to serve this lean sauce with potato pancakes. This type of lean buckwheat gravy is often served at funerals.

Lenten Caesar dressing


Well, let’s prepare a lean Caesar sauce, without anchovies and Worcestershire sauce. Which, by the way, contains anchovy extract, so it cannot be added to the post.

But on fish days, be sure to use these two ingredients. This dressing can be used not only for Caesar salad, but also for simple vegetables, such as grilled ones. And by the way, as a lean sauce for falafel, it’s not even bad.

And so, we need:

  • Avocado mayonnaise – 200 gr.
  • Soy sauce – 50 ml
  • Tofu cheese – 50 gr.
  • Capers – 1 tsp l.

How to prepare Lenten Caesar dressing:

  1. Place mayonnaise, capers and grated cheese in a blender bowl.
  2. Pour in soy sauce and whisk for a couple of minutes.
  3. The sauce is ready!

We did not give the recipe for avocado mayonnaise, since it is on our website. This mayonnaise already contains most of the ingredients for Caesar dressing. We just added soy sauce as a substitute for anchovies and Worcestershire.

It is good as a Lenten sauce for squid, for dumplings and as a sauce for carrot cutlets during Lent. We will prepare sauce from flour and garlic. And besides, it is made without oil with a spread, a vegetable analogue of butter.


  • Garlic – 3 cloves
  • Flour – 1 tbsp. l.
  • Lenten spread – 1 tbsp. l.
  • Plant milk – 200 ml
  • Tomato paste – 2 tsp.
  • Mustard – 1 tsp.
  • Salt, pepper to taste

How to make lean white sauce:

  1. First, let’s prepare the sauce Ru, for this we fry the flour in the spread until golden brown.
  2. Now slowly pour in the milk and stir with a whisk until the flour dissolves.
  3. It’s time to grate the garlic into the sauce on a fine grater, add the paste and mustard.

  • Basil – 1 bunch 
  • Pine nuts – 4 tbsp. l.  
  • Garlic – 3 cloves 
  • Olive oil – 1 cup
  • Salt to taste

How to do:

  1. It is better to chop the basil and garlic a little, this will help the blender to chop them better.
  2. Then load everything into a blender glass and beat thoroughly.
  3. Add salt and beat again.

This is almost classic pesto sauce, only without cheese. Many people wonder if pesto sauce can be used during Lent? The answer is yes, you can, but remove the cheese from the recipe.

Lenten mustard sauce

  • Plant milk – 500 ml
  • Coconut oil or spread – 1 tbsp. l.
  • Flour – 1 tbsp. l.
  • Nutmeg – 1/2 tsp.
  • Salt, pepper – to taste


  1. First you need to fry the flour in coconut oil or spread.
  2. Then slowly pour in the soy milk. Stir everything thoroughly with a whisk for a few minutes.
  3. Add nutmeg, pepper and salt and the sauce is ready.

As you understand, bechamel with coconut oil will smell like it. Goes very well with sweet dishes – pancakes, zucchini pancakes, casseroles.

And cooked on a spread is no different from the classic sauce. Serve it with pasta and with lean lasagna.
