Sauce composition:

  • Mayonnaise – 2 tbsp. l.

  • Sour cream – 2 tbsp. l.
  • PP mayonnaise – 1 tbsp. l.
  • Garlic – 2 cloves
  • Dill – 0.5 bunch
  • Turmeric – 0.5 tsp. l.
  • Salt, pepper to taste

How to make sauce for fried zucchini:

  1. As usual, chop the garlic and dill.
  2. Mix them with sour cream and mayonnaise.
  3. Add turmeric and salt and pepper, mix and you’re done!

As you can see, garlic dressing is mainly used for zucchini, as well as quick marinade. After all, this is a classic combination of neutral-tasting vegetables and something spicy.

Tomato sauce for fried zucchini and eggplant

This sauce is very good for grilled zucchini, because it is also suitable as kebab sauce. Make it bigger and kill two birds with one stone.


  • Krasnodar sauce – 2 tbsp. l.
  • Garlic – 1 clove
  • Dill – 0.3 bunch
  • Cilantro – 0.3 bunches
  • Balsamic vinegar – 1 tbsp. l.
  • Vegetable oil – 1 tsp.
  • Salt to taste

Step by step recipe:

  1. We grate the garlic or press it through a press, do not chop it.
  2. Chop the dill and cilantro and mix with the garlic and vegetable oil.
  3. We mix everything with Krasnodar sauce and balsamic vinegar, add some salt if necessary.
  4. Let it brew for 10 minutes and serve.

You can use tomato paste in this recipe, but it is advisable to heat it in a frying pan. This will remove the metallic taste.

And add all the ingredients to it during frying, you will get a slightly different, but no less tasty sauce. With Krasnodar sauce everything is much faster, especially since it already has all the necessary flavors.

Cheese sauce for fried zucchini and for battered zucchini, without garlic

Cheese sauce for fried zucchini

Another option for dipping sauce. After all, it’s better to dip zucchini in it, since it turns out to be quite thick, but it all depends on the amount of flour.


  • Cream – 100 ml
  • Cream cheese – 2 tbsp. l.
  • Cheddar cheese in slices – 2 pcs.
  • Muka – 1 h. l.
  • Butter – 1 tbsp. l.

How to cook:

  1. Melt the butter in a heavy-bottomed saucepan.
  2. Add flour to it and start frying until a delicious nutty smell appears (by the way, this is Ru thickener).
  3. Then begin to slowly pour in the cream and immediately stir it until the lumps of flour dissolve.
  4. Stir in the cream cheese, break up the cheddar a little and add it to the sauce as well.
  5. Let it gurgle a couple of times and turn it off, the creamy zucchini sauce is ready!

Also try a more refined cheese blue cheese sauce made from noble cheese. Of course, it is more expensive, but for lovers of blue cheese, it’s just a bomb!

For those who don’t like or simply don’t eat fried zucchini, you can bake them in the oven. After all, this sauce is well suited for baked zucchini and eggplant.

Sauce for zucchini, minced meat and potato casserole

Another baked zucchini dish, this time in the form of a casserole. And we will make the sauce based on bechamel sauce, which is often used for lasagna.

Before preparing the sauce for zucchini with minced meat in the oven, we recommend cutting them into thin rings and frying them. Then grease the container in which you will bake with oil and place a layer of potatoes, salt and pepper.

Place the minced meat, and on top of it a layer of fried zucchini and pour the sauce over everything. And now here is the sauce recipe.


  • Flour – 2 tbsp. l.
  • Butter more than 72% – 2 tbsp. l.
  • Milk – 0.5 l.
  • Nutmeg – a pinch
  • Salt, pepper to taste

Sauce recipe:

  1. In a heavy-bottomed saucepan, start melting the butter and then fry the flour in it.
  2. Then pour milk in small portions and stir the sauce with a whisk all the time.
  3. Sprinkle with nutmeg, pepper and salt, the casserole sauce is ready!

Be careful with salt, because you have already salted the potatoes and most likely the minced meat too. If the sauce is too thick, thin it with a little milk.

When you fill the casserole dish with the sauce, place the grated cheese on top and place in the preheated oven. Baking time is approximately 30-40 minutes at a temperature of 180 degrees.
