Eggplant sauce

It’s up to you to prepare this eggplant sauce for barbecue on the grill or in the oven. But of course, the option when eggplants with smoke will be more interesting.

We will need:

  • Eggplant – 2 pcs.
  • Garlic – 3 cloves
  • Sour cream (fat content to your taste) – 3 tbsp. l.
  • Vegetable oil – 2 tbsp. l.
  • Olive oil – 2 tsp.
  • Balsamic vinegar – 1 tsp. l.
  • Dill – 0.5 bunch
  • Salt, pepper to taste

How to prepare the sauce:

  1. The eggplant needs to be peeled and cut into cubes.
  2. Place on a baking sheet along with two cloves of garlic and pour over vegetable oil, mix well.
  3. Place in the oven for 15-20 minutes until golden brown at 240 degrees.
  4. At this time, chop the dill and crush the garlic through a press (you can use a grater).
  5. Take out the baked eggplants with garlic and add dill and fresh garlic to them.
  6. Press everything with a fork and mix, adding vinegar, olive oil and pepper and salt.
  7. Now that everything has cooled down a little, it’s time for sour cream, mix everything again.
  8. Eggplant sauce for barbecue, ready!

If you want a more garlicky barbecue sauce, add garlic at the end with sour cream. Conversely, if the taste of garlic is not needed, then leave only baked garlic, do not add fresh garlic.

If you bake eggplants on coals, then simply remove the pulp from them and add all the ingredients in the same order. This eggplant sauce is perfect for any meat and chicken.

Grilled vegetables

Grilled vegetable sauce for barbecue

Sauce for barbecue made from baked vegetables is also a wonderful and healthy side dish. Especially for children, who are so difficult to feed with vegetables. You can use any vegetables you like.

We will need:

  • Eggplant – 2 pcs.
  • Bell pepper – 2 pcs.
  • Tomatoes – 2 pcs.
  • Garlic – 2 cloves
  • Citric acid or vinegar – 1 tsp.
  • Vegetable or olive oil – 2 tbsp. l.
  • Any greens – 1 bunch
  • Salt, pepper to taste

How to do:

  1. Fry vegetables on grates or on skewers until they are burnt; eggplants and peppers can be placed directly on the coals.
  2. Don’t be afraid of burnt skin; it can be easily peeled if you remove the vegetables from the coals, put them in a bowl and cover with a lid.
  3. Now that the vegetables have been peeled, you can chop them to the consistency you want and add the rest of the ingredients.
  4. Mix everything well and the baked sauce is ready!

Garlic can also be baked directly with the whole head. And the sauce itself, if desired, can be pureed with a blender, but pieces are tastier and can be used as dipping sauce. Try adding balsamic vinegar instead of lemon.

Dip pita bread into it, use it as a sauce for French fries or eat it as a separate dish. You can also make a spicy sauce for kebabs. Just bake a hot pepper pod along with bell peppers.

Curd sauce with garlic and herbs

This can be said to be dietary or PP barbecue sauce. Especially if you take low-fat products, the sauce will be very light.

Composition:

  • Cottage cheese – 1 pack
  • Garlic – 2 cloves
  • Dill – 0.5 bunch
  • Yogurt or matzo – 3 tbsp.
  • Vegetable oil – 1 tsp.
  • Salt and pepper to taste

How to cook:

  1. Grate the garlic or press it through a garlic press.
  2. Finely chop the dill.
  3. Mash the cottage cheese with a fork and add all our ingredients to it.
  4. Mix everything well and you’re done!

It is better to take cottage cheese moist in packs, not crumbly. However, all this can be put in a blender bowl and whipped, then any cottage cheese will do.

From sour cream and mayonnaise

Here is another version of white barbecue sauce, it is of course higher in calories, but in my opinion tastier. This barbecue sauce is garlic and sour cream, which is always a tasty combination. The sauce is especially good for chicken kebab. We recommend making mayonnaise with your own hands.

We will need:

  • Sour cream (fat content to your taste) – 200 gr.
  • Mayonnaise – 200 gr.
  • Cilantro – 1 bunch
  • Walnut – 50 gr.
  • Garlic – 2 cloves
  • Salt and pepper to taste

Recipe:

  1. Mix sour cream with mayonnaise.
  2. Chop the cilantro, crush the nut a little in a mortar or cut it with a knife.
  3. It is better to squeeze the garlic through a press or crush it in a mortar.
  4. All that remains is to mix everything and pepper and add salt to your taste.
  5. White sauce for barbecue is ready!

Although many people don’t like cilantro, try making barbecue sauce with cilantro for the first time. Believe me, many will change their attitude towards her. We also do not recommend finely grinding the nut, it should be felt, unlike nut sauce.

White garlic barbecue sauce is an excellent substitute for red. And, as you understand, the recipe is very easy, you can make it right in nature. If you don’t want to make mayonnaise sauce, then leave only the sour cream and add a little lemon juice.

Kefir sauce

Kefir kebab sauce

This sauce goes well with fish kebab. And this sauce is especially good for catfish barbecue. Kebab sauce made from yogurt and kefir, it is something between Greek tzatziki sauce and tartar.

We will need:

  • Greek yogurt – 200 ml.
  • Kefir – 100 ml.
  • Pickled cucumber – 1 pc.
  • Dill – 1 bunch
  • Garlic – 2 cloves
  • Salt to taste

Cooking process:

  1. To begin, grate the cucumber, preferably not on a fine grater, squeeze it out and place in a colander.
  2. Chop dill and garlic in any way.
  3. If the cucumber has added moisture, squeeze again and mix all the ingredients, adding salt.
  4. Delicious barbecue sauce, ready!
