How to make the sauce:
- First of all, remove the skins from the tomatoes; to do this, make an incision on them crosswise and pour boiling water over them.
- Finely chop the garlic, cilantro and pepper.
- Next, chop the tomatoes as finely as possible and place them in a frying pan with oil.
- After simmering them a little, add pepper and garlic to them, simmer for another 5 minutes.
- Throw in the cilantro and add salt and sugar.

If you want to make red Georgian sauce for khinkali in winter, you can replace tomatoes with tomato paste. One tablespoon of tomato paste replaces one tomato, but add a little water.
Khinkali sauce made from tomato paste will be richer. You can also replace it with tomato juice, otherwise the recipe is the same. Be careful with hot peppers, test them for spiciness first.
Sour cream with garlic and herbs
Sour cream sauce for khinkali is quick and easy to make. It also goes great with dumplings and dolma. This is a kind of deep sauce in which you can dip various goodies.
Composition:
- Cream – 200 g.
- Garlic – 4 cloves
- Greens (to your taste) – 1 bunch
- Turmeric – 1 pinch
- Ground coriander – 0.5 tsp.
- Salt to taste
How to cook:
- Pass the garlic through a press or three on the finest grater.
- Chop the greens as finely as possible.
- Next, combine all the ingredients in one container.

Matsoni sauce

- Mazzoni – 200 g.
- Garlic – 4 cloves
- Cilantro – 1 bunch
- Utsho-suneli – 0.5 h. l.

- Mayonnaise – 3 tbsp. l.
- Homemade mustard – 1 tsp.
- Lemon juice/vinegar – 1 tsp.
- Greens – 0.5 bunch
- Garlic – 1 clove
- Salt, pepper to taste
How to prepare mayonnaise sauce for khinkali:
- Mix mayonnaise with mustard and lemon juice.
- Chop the garlic and herbs as finely as possible and add to the mayonnaise.
