Pickled pepper sauce

First, we’ll give you a recipe for the Yellow lantern marinade. After all, it’s more difficult to buy pickled ones; it’s easier to find seeds and grow your own, and then pickle them.

Ingredients of the marinade:

  • Pepper – 500 gr.
  • Water – 250 ml
  • Sol – 1 h. l.
  • Sugar – 2 h. l.
  • Vinegar 9% – 70 ml

Cooking process:

  1. Place a pan of water on the fire and add salt, sugar and vinegar to it and stir until they dissolve.
  2. We clean the pepper and cut it into rings.
  3. Place in a saucepan and wait for it to boil, turn off and leave to cool.
  4. Transfer to a jar and fill with brine to the top and wait 2-3 days.

The whole process is no different from marinating  jalapeño peppers. Using the same principle, you can pickle garlic or buy it already pickled. And so, let’s start preparing the Yellow Lantern sauce.

We will need:

  • Pepper Yellow lantern – 5 pcs.
  • Pumpkin – 100 gr.
  • Pickled garlic – 4 cloves
  • Rice vinegar – 2 tsp
  • Sol – 2 h. l.
  • Sugar – 1 h. l.

How to make the sauce:

  1. Boil the pumpkin with salt and sugar for 20-30 minutes until soft.
  2. Slightly chop the pepper, pumpkin and garlic and place in a blender glass.
  3. Add vinegar, salt and sugar to them, beat everything to the consistency you need.

It is better to store it in glass jars, which are first doused with boiling water. Then put them in the refrigerator.

Fresh pepper sauce

Yellow Lantern Sauce

Fresh pepper sauce – “Yellow Lantern” prepared similarly to jalapeño pepper sauce.

Composition:

  • Yellow hot pepper – 1 kg
  • Pumpkin – 400 gr.
  • Table vinegar 9% – 50 ml.
  • Starch – 1 h. l.
  • Sugar – 1 tbsp. l.
  • Salt – 2 tbsp. l.

How to prepare the sauce:

  1. Wash the pepper, remove the seeds and membranes, cut into rings, and punch with a blender.
  2. Cut the pumpkin into cubes, add vinegar and salt with sugar, put everything on the fire and cook until softened.
  3. Then we rub it through a sieve and put it back on the fire.
  4. When it boils, check the consistency and add boiling water if necessary.
  5. We dilute the starch in one hundred milliliters of cold water and add it to the sauce.
  6. Bring to a boil again and you’re done!

This sauce can be served as dipping sauce for nachos.

Roasted Pepper Sauce

Grilled vegetables

Yellow Lantern Sauce from peppers baked in the oven, and best of all on the grill, this is not a recipe, but a bomb! There’s a spicy, finger-licking aroma here.

Composition:

  • Pepper – 4 pcs.
  • Pumpkin – 100 gr.
  • Garlic – 3 cloves
  • Lemon juice – 2 tbsp. l.
  • Vegetable oil – 2 tbsp. l.
  • Salt, sugar to taste

Step by step recipe:

  1. Peel and finely chop the peppers and pumpkin, peel the garlic.
  2. Add one spoon of oil, mix and put everything in the oven at 180° for 20-25 minutes.
  3. Then we beat it with a blender, add another spoonful of butter, sugar and add salt.
  4. Beat everything again until smooth and done!

There are several options for preparing this sauce. If you grill vegetables, it is better to leave the peppers whole, this will make it easier to remove the charred skin from them. And then clean them of seeds and partitions.

You can also burn them with a torch or on gas, but the pumpkin will need to be baked; this can be done on coals. But as for the blender, you don’t have to use it.

You can mash the pumpkin and baked garlic with a fork, and chop the peppers with a knife. The result will be a completely different texture of the sauce, but this is all a matter of personal taste.
