Classic recipe

This gorgeous Georgian yellow plum sauce goes well with any dish, adding a spicy kick. You need to prepare tkemali from yellow plums when the fruit has reached ripeness.

For traditional sauce you should take:

  • water – 250 ml;
  • yellow plum – 3 kg;
  • basil – 1 bunch;
  • cilantro – 1 bunch;
  • ground red and black pepper – 1 tsp each;
  • nutmeg – 1 tbsp. L.;
  • capsicum – 2 pcs.;
  • parsley – 1 bunch;
  • sugar – 4 tbsp. L.;
  • salt – 1 tbsp. L.;
  • Utskho- and khmeli-suneli – 1 tbsp. l.;
  • garlic – 2 heads.

Pour water into a non-enamelled aluminum pan and, stirring, cook the fruit until soft over low heat. They will not burn in such a dish. In addition, vitamin C is destroyed less in it. After 20 minutes, turn off the stove.

In order to prepare tkemali sauce from yellow plums, it is better to take slightly unripe sour fruits. But they often add piquancy to it by adding vinegar. It allows you to preserve canned food for 3 years.

We will need:

  • plums -1 kg;
  • hot red pepper – 2 pods;
  • parsley – 1 bunch;
  • dill – 1 bunch;
  • vinegar 70% – 1 tsp;
  • salt and sugar – to taste;
  • sunel hops – 3 tbsp. L.;
  • garlic – 7 cloves.

How to make tkemali sauce with vinegar:

  1. The ingredients are prepared similarly to the previous recipes.
  2. Everything is crushed to a puree.
  3. Add sugar, salt and vinegar.
  4. Simmer for 1.5 hours with constant stirring.
  5. Pour into sterile jars.

It’s up to you to decide whether you need to add vinegar to tkemali; this recipe can be prepared without vinegar.
